BASIC GUACAMOLE

Basic Guacamole image

Guacamole should be made by hand, preferably in a molcajete, a mortar made from volcanic rock. A food processor or blender won't give you the proper chunky texture.

Provided by Martha Stewart

Categories     Appetizers

Yield Makes about 1 1/2 cups

Number Of Ingredients 6

1 clove garlic
2 serrano chilies, stemmed
1 small tomato, chopped
2 large ripe avocados, preferably Hass
2 tablespoons coarsely chopped cilantro
Salt

Steps:

  • If using a molcajete, grind garlic and chiles to a paste. Grind part of tomato to a paste, or reserve all of it to fold in at the end. If you don't have a molcajete, chop garlic and chiles finely, then proceed using a bowl and fork.
  • Cut avocados in half and peel. Remove pit by inserting the blade of a knife into pit and twisting. Mash avocados into chile mixture, leaving some texture. Add salt to taste. Stir in cilantro and tomato, reserving a little of each for garnish. Serve immediately.

Tips:

  • Use ripe avocados: The riper the avocados, the creamier and more flavorful your guacamole will be.
  • Choose the right avocado variety: Hass avocados are the most popular choice for guacamole, as they have a rich, creamy flavor and a smooth texture.
  • Scoop out the avocado flesh carefully: Use a spoon to scoop out the avocado flesh, being careful not to scoop out any of the bitter skin.
  • Mash the avocado flesh until smooth: Use a fork or a potato masher to mash the avocado flesh until it is smooth and creamy.
  • Add your favorite seasonings: Common seasonings for guacamole include lime juice, salt, cilantro, onions, and chili peppers. You can also add other ingredients, such as tomatoes, corn, or black beans.
  • Serve guacamole immediately: Guacamole is best served fresh, so make it just before you plan to eat it.

Conclusion:

Guacamole is a versatile dish that can be enjoyed in many ways. It is a popular dip for chips, but it can also be used as a sandwich spread, a taco filling, or even as a salad dressing. No matter how you choose to enjoy it, guacamole is a delicious and healthy snack or meal.
