Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 17

1/3 cup extra-virgin olive oil, divided
2 pounds cleaned, mixed mushrooms, (sliced or quartered depending on variety)
Gray salt
Freshly ground black pepper
2 tablespoons butter, divided
2 to 3 shallots, minced
4 cloves garlic, minced
1 1/2 tablespoons freshly chopped thyme leaves
1 cup heavy cream
1/4 cup grated Parmesan
1/2 lemon, juiced
1 egg, well beaten
2 tablespoons freshly minced parsley leaves
1 sheet frozen puff pastry, thawed
Flour, for dusting work surface
1 pound dry beans, for baking crostata shell
8 ounces crumbled blue cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Heat 2 large saute pans over high heat. Working in batches divide the olive oil between the 2 pans. When the oil is hot but not quite smoking, add the mushrooms, season with gray salt and pepper, add the butter to each pan and allow to caramelize. Once mushrooms have cooked down to half their volume, transfer all mushrooms to 1 pan. Add the shallots and garlic and cook until the light brown and fragrant. Add the thyme until it crackles. Add the cream and bring up to a simmer. Reduce the cream by about half and stir in the grated parmesan, and the lemon juice. Shut off the flame and quickly stir in the beaten egg. Remove from the stove and let cool to room temperature. Add parsley and stir.
  • While mushroom mixture is cooling, roll out the pastry dough on a floured surface. Roll the dough out so that it will line a 10-inch removable bottom tart pan. Line the dough with parchment paper and fill with the dry beans. Bake for 10 to 12 minutes, remove from the oven and let cool to room temperature. Remove beans and paper.
  • Lower oven temperature to 400 degrees F.
  • When both the filling and shell have cooled to room temperature fill the shell with the mushroom mixture and top with the crumbled blue cheese. Arrange the tart mold on a cookie sheet and bake for 20 to 30 minutes. Remove from the oven and allow to cool to room temperature before serving. Slice in wedges and serve.

Yield Makes about 40 hors d'oeuvres

Number Of Ingredients 29

For pâté
1 1/2 cups chicken stock or store-bought low-sodium broth
1 ounce (1 cup) dried porcini mushrooms (see Sources)
1 stick (8 tablespoons) unsalted butter
3/4 cup minced shallots (5 ounces)
2 garlic cloves, minced
1/4 cup dry sherry
3/4 pound shiitake mushrooms, stems discarded and caps thinly sliced (6 cups)
3/4 pound oyster mushrooms, trimmed leaving stems intact, and caps thinly sliced (3 3/4 cups)
1 cup heavy cream
4 large eggs
1/4 cup (1 ounce) whole almonds with skins, toasted (see Tips, page 938), cooled, and finely ground in a food processor
1/4 cup chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
1/3 cup fine fresh bread crumbs
1 1/2 tablespoons fresh lemon juice
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
For mushroom topping
2 tablespoons unsalted butter
1 tablespoon olive oil
1 cup (3 ounces) shiitake mushrooms, stems discarded and caps quartered
1 cup (2 3/4 ounces) oyster mushrooms, stems discarded and caps quartered
3/4 cup (3 1/2 ounces) whole almonds with skins, toasted and coarsely chopped
1/4 cup fresh flat-leaf parsley leaves
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
Accompaniment: assorted toasts and/or crackers
Special equipment: a 12-by-3-by-2 3/4 inch (2-quart) loaf pan or terrine; parchment paper

Steps:

  • Make the pâté:
  • Butter loaf pan, then line bottom and sides with parchment paper and butter paper.
  • Bring stock to a boil in a small saucepan. Remove pan from heat, add porcini, and let soak in hot stock until softened, about 30 minutes.
  • With a slotted spoon, transfer porcini to a medium-mesh sieve set over a bowl. Press on porcini with back of a spoon to remove excess liquid, then add this to soaking liquid and reserve. Rinse porcini to remove any grit. Pat dry, chop, and put in a large bowl.
  • Strain reserved soaking liquid through a fine-mesh sieve lined with a coffee filter or dampened paper towel into another small saucepan. Bring to a brisk simmer over moderate heat and simmer until reduced to about 1/4 cup, about 10 minutes. Add to porcini.
  • Put a rack in middle of oven and preheat oven to 350°F. Heat 2 tablespoons butter in a large nonstick skillet over moderate heat until foam subsides. Add shallots and garlic and cook, stirring, until softened, about 6 minutes. Add sherry and cook, stirring for 1 minute. Transfer mixture to a blender. Heat 2 more tablespoons butter in skillet over moderately high heat until foam subsides. Add one third of shiitake and oyster mushrooms and cook, stirring, for about 2 minutes. Transfer to a bowl and cook remaining mushrooms in 2 batches, adding 2 more tablespoons butter to skillet for each batch. Add 2 cups sautéed mushrooms to shallot mixture in blender, and add remaining mushrooms to porcini mixture.
  • Add cream, then eggs and almonds to blender and purée until mixture is very smooth, about 1 minute. Add purée to porcini mixture and stir in parsley, thyme, bread crumbs, lemon juice, salt, and pepper until well combined. Pour mixture into loaf pan and cover with foil.
  • Put loaf pan in a larger baking pan and add enough boiling water to reach halfway up sides of loaf pan. Bake until set 1/2 inch from edges, about 50 minutes (pâté will not be completely set in center). Remove loaf pan from baking pan and let cool to room temperature on a rack. Refrigerate pâté in loaf pan, covered, for at least 6 hours. Bring pâté to room temperature before adding topping.
  • While the pâté comes to room temperature, make the topping:
  • Heat butter and oil in a large skillet over moderately high heat until foam subsides. Add mushrooms and almonds and cook, stirring, until mushrooms are tender and liquid they give off has evaporated, 6 to 8 minutes. Transfer to a heatproof bowl and let cool, then add parsley, salt, and pepper and toss to combine.
  • To unmold pâté, run a thin knife between paper and edges of loaf pan. Invert a large plate over loaf pan and invert pâté onto plate (peel off paper). Mound topping on pâté, and spread on toasts and/or crackers.

MUSHROOM TART

Mushroom tart image

Create an eye-catching mushroom tart for an easy but impressive vegetarian main course. Try a tasty pairing of earthy mushrooms, cream cheese and nutty pastry

Provided by Georgina Kiely - Digital food editor, bbcgoodfood.com

Time 1h10m

Number Of Ingredients 9

175g Flora 100% Natural Ingredients plus 2 tbsp
300g wholemeal flour
A small handful of thyme, leaves picked
600g mixed mushrooms, cleaned and sliced
1 small onion, finely choped
125g soft cheese
1/2 small bunch chives, chopped
2 garlic cloves, crushed
1 egg, beaten to glaze

Steps:

  • Put 175g Flora 100% Natural Ingredients, wholemeal flour, half the thyme and a pinch of salt in a food processor and pulse until it starts to clump together. Add 2-3 tbsp cold water and pulse again until it forms a ball. Wrap and chill for 20 mins.
  • Meanwhile, heat the remaining 2 tbsp spread in a frying pan, and fry the mushrooms and onions for 10 mins until soft and lightly golden. Season well and remove from the heat.
  • Heat the oven to 220C/fan 200C/gas 7. Add a large flat baking sheet to the oven to heat up. Whisk the soft cheese with half the chives, remaining thyme and all the garlic. Season well.
  • Roll the pastry out in between two sheets of parchment to a rough rectangle shape, the thickness of a £1 coin, about 30x40cm. Remove the top layer of parchment and smooth over the soft cheese mixture, leaving a 5cm border. Spoon over the mushrooms, in an even layer over the soft cheese, then fold over the 4 sides of the border to overlap the filling slightly. Trim the sides before you fold over if you need to, but will look lovely when baked either way. Glaze the pastry with egg.
  • Using the parchment to help you, slide the tart onto the hot tray with the paper. Bake for 35-40 mins until the pasty is cooked though, and crisp. Scatter with the remaining chives to serve, along with a green salad.

RUSTIC MUSHROOM TART

Rustic Mushroom Tart image

Don't let phyllo dough's fussy reputation put you off: our method of brushing olive oil and sprinkling breadcrumbs between the layers makes this tart actually quite simple to assemble, and helps keep it healthy. It can be served as a main course or cut into smaller pieces and enjoyed as an appetizer. Thaw frozen phyllo in its package at room temperature for 2 hours or in refrigerator for at least 8 hours or overnight. EatingWell Magazine, June 2007. Always remembering to keep it covered with a damp cloth towel.

Time 1h

Yield 12 serving(s)

Number Of Ingredients 13

3/4 cup part-skim ricotta cheese
1/2 cup soft fresh goat cheese (2 ounces)
2 teaspoons chopped fresh rosemary
fresh ground pepper
crushed red pepper flakes (optional)
1 tablespoon butter
4 cups mixed wild mushrooms, coarsely chopped (we used button mushrooms, personal preference)
1 large leek, white part only, halved lengthwise, thinly sliced and thoroughly washed
1/2 teaspoon salt
1/4 cup white wine
thawed phyllo dough (10 sheets 14x18-inch or 20 sheets 9x14-inch phyllo dough)
1/4 cup extra virgin olive oil
1/4 cup plain breadcrumbs

Steps:

  • Combine ricotta, goat cheese, rosemary and peppers in a medium bowl; set aside.
  • Heat butter in a large skillet over medium-high heat.
  • Add mushrooms, leek and salt and cook, stirring, until the leek starts to soften and the mushrooms release their juices, about 3 minutes.
  • Pour in wine and simmer until the liquid has evaporated, about 2 minutes & set aside.
  • Preheat oven to 400°F
  • Line a large baking sheet (approximately 12 by 17 inches) with parchment paper.
  • Lay one large sheet of phyllo on the prepared pan. (If using the smaller size, slightly overlap two sheets to form a rectangle.)
  • Keep the remaining phyllo covered with plastic wrap or wax paper and a damp kitchen towel.
  • Lightly coat the phyllo with oil using a pastry brush.
  • Sprinkle with 1 teaspoon breadcrumbs.
  • Repeat this step, layering the remaining phyllo on top.
  • Carefully roll about 3/4 inch of each side toward the center to form the outer rim of the tart.
  • Spread the reserved cheese mixture evenly over the phyllo.
  • Top with the reserved mushroom mixture.
  • Bake the tart until the crust is brown and crispy, 25 to 30 minutes.
  • Let cool in the pan on a wire rack for 5 minutes.
  • To serve, lift the parchment paper and slide the tart onto a cutting board or large platter & serve warm.
  • Also serve a salad of baby greens, carrots, and radishes with a vinaigrette -- warm bread, lathered with butter & a nice fruity wine!

Tips:

  • Use a variety of mushrooms. This will give your tart a more complex flavor. Some good choices include shiitake, oyster, cremini, and portobello mushrooms.
  • Sauté the mushrooms before adding them to the tart. This will help to caramelize them and bring out their flavor.
  • Use a good quality cheese. This will make a big difference in the taste of your tart. Some good choices include Gruyère, Brie, and Fontina.
  • Don't overcook the tart. The crust should be golden brown and the filling should be set but still slightly wobbly.
  • Let the tart cool slightly before slicing and serving. This will help to prevent the filling from spilling out.

Conclusion:

This exotic mushroom tart is a delicious and easy-to-make dish that is perfect for any occasion. With its rich and flavorful filling and crispy crust, this tart is sure to be a hit with everyone who tries it. So next time you're looking for a special dish to serve, give this exotic mushroom tart a try. You won't be disappointed!
