4 tablespoons canola oil
6 pounds yellow onions (, sliced 1/4 inch thick with the grain)
1/2 cup sherry wine
1/2 cup red wine
1/8 cup tomato paste
1/4 cup garlic purée
1 bouquet garni
4 tablespoons concentrated beef base
10 cups chicken stock
thyme leaves for garnish
1 baguette (, cut into 1 inch slices)
8 slices provolone cheese
2 cups shredded gruyere cheese (, (optional))

Steps:

  • In a large stock pot or dutch oven, melt the butter and canola oil together over high heat and add the onions. Sauté, stirring occasionally until they start to caramelize, about 15 minutes. Reduce the heat to medium high and continue to sauté until the onions are a deep brown color, about 1 hour.
  • Deglaze with the sherry and red wine and cook until the liquid is nearly evaporated.
  • Stir in the tomato paste and garlic purée. Add the bouquet garni, chicken stock, and beef base and bring to a simmer and cook for 45 minutes.

2 lbs yellow onions (about 4 large onions, peeled and cut into thin slices)
2 tbsp olive oil
1-2 tbsp unsalted butter
½ tsp salt (plus more, to taste)
1 tsp white sugar
3 cloves garlic (chopped)
⅓ cup dry red wine (I use malbec )
4 cups vegetable broth
½ tbsp fresh thyme (plus more for garnish)
2 bay leaves (discard before serving)
½ tbsp Worcestershire sauce*
1¼ cup gruyere, shredded (measure generously)
2 slices Swiss cheese (place one in the bottom of each soup bowl)
pinch cinnamon (really, just a pinch! )
black pepper (to taste)
French baguette (sliced)
olive oil or cooking spray

Steps:

  • Heat the olive oil over medium high heat in a large pot. When it's hot, add the sliced onions. Cook and stir often with a wooden spoon until the onions start to soften, about 20 minutes.
  • Add the butter and cook for another 20 minutes, continuing to stir every 2-4 minutes. Keep a close eye on your onions that they don't burn. Reduce heat if necessary.
  • Add the salt and sugar and continue cooking for another 15 minutes (this is when they'll really start to brown). Once you reach the 12 minute mark, add the chopped garlic.
  • Pour in the red wine to deglaze the pan. Using your wooden spoon, scrape the bottom and sides of the pan to get at any caramelized bits. Let cook for a minute or two, or until most of the wine has cooked off.
  • Add the vegetable broth, worchestire sauce, bay leaves, thyme, several grinds of black pepper, and just a pinch of cinnamon. Bring to a simmer. Cover and cook for 30 minutes, stirring every couple of minutes.
  • While the soup simmers, preheat the oven to 400F. Cut a French baguette into thick slices**, about three per bowl. Spray or brush one side of each slice with olive oil. Place on a tin-foil covered tray. Bake for ten minutes, flipping half way through, or until lightly golden and toasty. Set aside. Keep pan handy for later use.
  • Discard the bay leaves from the soup. Taste test the soup and adjust for salt/pepper.Place one slice of Swiss cheese in the bottom of each oven-safe soup bowl before adding the soup. Divide the soup evenly among the bowls.Top with three slices of toasted baguette.
  • Sprinkle the cheese on both bowls. Place the bowls on the tin-foil covered tray. Turn your oven to broil and broil the soup for a few minutes, until cheese is very bubbly and slightly golden. Top with more thyme (optional) and pepper, or even more bread for dipping on the side.Serve hot and enjoy. Soup and bowls will be very hot!

1/2 cup unsalted butter
5 lbs vidalia onions, thinly sliced (OR substitute spanish or hawaiian onions. DO NOT USE RED SALAD ONIONS.)
7 teaspoons better than bouillon beef base or 7 cans beef broth
3 teaspoons better than bouillon chicken bouillon granules or 3 cans chicken broth
Worcestershire sauce
2 cups dry white wine
French bread, slices toasted (see below)
olive oil
parmesan cheese
cheese slice (mozzarella, swiss, or gruyere)

Steps:

  • Make stock by bringing 10 cups water to boil.
  • Add beef and chicken bouillon pastes (or heat canned beef and chicken broth).
  • Lower heat to simmer and let simmer while preparing onions.
  • Melt butter slowly (so it does not brown) in large soup pot over low heat.
  • Add thinly sliced onions.
  • Stir, cover, and cook on low heat until lightly brown, stirring occasionally, about 30 mins.
  • Add wine, bring to boil, scraping up browed bits.
  • Cook about 5 mins.

2 tablespoons butter
6 cups yellow onion, thinly sliced
1 teaspoon salt
½ teaspoon sugar
3 tablespoons flour
6 cups beef stock
1 cup white wine

1 leaf whole bay leaf
1 loaf french bread, or baguette
3 tablespoons cognac, optional
12 oz swiss cheese, grated

Steps:

  • In a large pot over medium-low heat, heat olive oil and add butter. Once the butter is melted, stir the onions and coat with oil and butter.
  • Cover and cook for 20 minutes, checking occasionally.
