Mix up this kid-friendly marinade, pop it in the freezer with 1 1/2 pounds of chicken and you'll have dinner ready to go on a busy week where there's no time for meal planning.

2/3 cup ketchup
1 tablespoon light brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.

700g / 1.4 lb chicken breast, tenderloins or thigh ((Note 1))
2 tbsp honey OR brown sugar
1 tbsp olive oil ((or any oil))
5 tbsp soy sauce
2 tbsp lemon juice
2 tsp Worcestershire sauce
4 garlic cloves (, minced)
1 tsp dried oregano ((or rosemary, thyme, minced herbs))
1/2 tsp black pepper (, ground)
Finely chopped parsley
Lemon slices

Steps:

  • Recommended: Pound breast to even thickness using a meat pounder, rolling pin, or fist. OR cut large ones in half horizontally to form 2 cutlets (steaks) for each.
  • Mix marinade in a ziplock bag (or container in which chicken fits snugly). Add chicken.
  • Marinate 3 hours to overnight, though even 30 minutes is effective. (Note 2)
  • Heat 1 tbsp olive oil in a large skillet over medium high heat, and cook chicken per times below until deep golden (see video). If browning too quickly, lower heat.
  • Transfer to serving plate, cover loosely with foil and rest for 3 minutes before serving, garnished with parsley and lemon slices if desired.

My sister was kind enough to share this wonderful marinade. It tastes better than just teriyaki sauce. This marinade sauce is awesome. The perfect marinade. To use the marinade, pierce up to 4 pounds of chicken pieces all over with a fork and marinade 2 hours before cooking as desired.

We served this recently at a dinner in honor of our youngest daughter who just married. As usual, people were lining up for the recipe. I've used it since 1976, adapted from a recipe that apparently came from Cornell Cooperative Extension. I changed it slightly, but always receive rave reviews when we serve it to company.

1 egg, beaten
1 1/2 teaspoons salt
1/2 cup vegetable oil
1 cup cider vinegar
4 tablespoons bell seasoning or 4 tablespoons chesapeake Old Bay Seasoning
3 cloves garlic, halved
ground pepper
3 -4 lbs chicken parts or 3 -4 lbs boneless chicken breasts

Steps:

  • Blend all (except chicken) in Cuisinart or blender.
  • Pour over raw chicken and allow to marinate in the refrigerator, preferably overnight.
  • Remove chicken from marinade and discard marinade.
  • Grill chicken until cooked through.
