1 1/2 cups sugar
1/4 cup oil
2 eggs
1 teaspoon vanilla
2 cups flour
1/4 teaspoon salt
2 teaspoons baking soda
1 (16 ounce) can fruit cocktail
1/2 cup coconut
1/2 cup margarine or 1/2 cup butter
3/4 cup sugar
1/2 cup milk
1/2 cup coconut
1/2 cup chopped walnuts
1 teaspoon vanilla

Steps:

  • Beat together sugar, oil, eggs, and vanilla.
  • Sift together flour, salt, and baking soda.
  • Add fruit cocktail, mix well.
  • Pour in 9x13 inch pan.
  • Sprinkle coconut over batter.
  • Bake at 350 degrees for 45 minutes.
  • Just before removing cake from oven, bring margarine, sugar, and milk to boil in small saucepan for one minute.

2 1/2 cups sugar, divided
1/2 cup butter
1 egg
1 teaspoon vanilla extract, divided
1 teaspoon baking powder
1/2 teaspoon baking soda
6 tablespoons buttermilk
3 -4 cups flour
3 tablespoons cornstarch
1/8 teaspoon salt
3/4 cup water
1 cup orange juice
1/4 cup lemon juice
8 ounces cream cheese
5 -6 kiwi, peeled and sliced
2 -3 bananas, sliced
1 pint strawberry, sliced
11 ounces mandarin oranges, drained
1/2 cup blueberries

Steps:

  • Cream one cup sugar and butter until smooth. Add egg, 1/2 teaspoon vanilla and baking powder; continue beating. In a separate bowl, combine soda and buttermilk; add to creamed mixture. Stir in flour until soft dough forms, adding enough so that the dough is not sticky. Divide dough in half. Wrap one half in plastic zipping bag and freeze for future use. Roll remaining half into a greased 12" pizza pan. Bake at 400 degrees for 10 minutes, or until top becomes slightly browned; cool. In small saucepan, combine one cup sugar, cornstarch and salt. Add water, orange juice and lemon juice. Cook and stir on medium heat until mixture becomes thick and bubbly. Remove from heat. Cool to room temperature. Mix cream cheese with 1/2 cup sugar. Add remaining vanilla. Spread mixture on crust. Arrange fruit on crust in circles, beginning with kiwi fruit on outside edge and overlapping fruit. Continue circling with bananas, strawberries and oranges finishing with a small circle of strawberries and bananas. Randomly place blueberries on top of other fruits. Carefully spoon sauce over top of fruit. Cut into 8 large pieces; serve.
