I had some sirloin that I had to use up and couldn't find a recipe that I liked, so I made one up! I didn't have any tortillas to make traditional fajitas so I just put them on a stick! I use the fajita marinade for lots of different recipes with any kind of meat, including shrimp and fish.

¼ cup extra-virgin olive oil
½ lime, zested and juiced
2 cloves garlic, minced, or more to taste
½ teaspoon ground cumin
¼ teaspoon red pepper flakes, or more to taste
¼ teaspoon ground chipotle pepper
1 ½ pounds beef sirloin, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch cubes
1 green bell pepper, cut into 1-inch cubes
½ onion, cut into 1-inch cubes

Steps:

  • Whisk olive oil, lime juice, lime zest, garlic, cumin, red pepper flakes, and chipotle pepper together in a large glass or ceramic bowl. Add sirloin and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 30 minutes to 2 hours.

1 ¼ pounds boneless, skinless chicken breast halves, cut into 1 inch pieces
½ medium green bell pepper, cut into 1-inch pieces
½ medium onion, cut into 1/2-inch slices
16 each cherry tomatoes
8 each fajita size flour tortillas, warmed

Steps:

  • In large resealable plastic bag, pour 3/4 cup Lawry's® Tequila Lime Marinade With Lime Juice over chicken; turn to coat. Close bag and marinate in refrigerator 30 minutes. Soak 8 wooden skewers in water 15 minutes.
  • Remove chicken from Marinade, discarding Marinade. On skewers, alternately thread chicken, green pepper, onion and tomatoes. Grill or broil, turning once and brushing frequently with remaining 1/4 cup Marinade, 15 minutes or until chicken is thoroughly cooked.
  • Remove chicken and vegetables from wooden skewers. Serve on tortillas and, if desired, with sour cream and shredded Cheddar cheese.
