1 teaspoon canola oil
1 medium onion, finely chopped
1 garlic clove, minced
1 cup dried lentils, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
2-1/2 cups vegetable or reduced-sodium chicken broth
1 cup salsa
12 taco shells
1-1/2 cups shredded lettuce
1 cup chopped fresh tomatoes
1-1/2 cups shredded reduced-fat cheddar cheese
6 tablespoons fat-free sour cream

Steps:

  • In a large nonstick skillet, heat oil over medium heat; saute onion and garlic until tender. Add lentils and seasonings; cook and stir 1 minute. Stir in broth; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes. , Cook, uncovered, until mixture is thickened, 6-8 minutes, stirring occasionally. Mash lentils slightly; stir in salsa and heat through. Serve in taco shells. Top with remaining ingredients.

After loosely trying various recipes, this is the combination that worked for my family. It is spicy enough for dh abut not so blazing that the kids won't eat it. THE PICKY ONE had 5 tacos!! Dh's comment, "you've made this a few times before but this one I LIKE." You can use vegetable broth to keep it vegetarian or use chicken or beef. You can use a can of diced tomatoes (regular or Rotel) instead of taco sauce or salsa but it will take a bit longer to cook because of the added liquid. This made enough for our family of 4 to have 3-4 tacos each with just a little bit left over.

1 onion, chopped
4 garlic cloves, minced
1/2 teaspoon salt
1 (1 1/4 ounce) package taco seasoning
1 tablespoon dried oregano
1 chipotle chile in adobo, minced
2 cups brown lentils
4 cups broth
1/2 cup taco sauce or 1/2 cup salsa
taco shell, hard & soft
shredded cheese
diced tomato
iceberg lettuce, shredded
sour cream
onion, diced
salsa

Steps:

  • In large saute pan, heat oil. Add onion, sprinkle with salt, stir & saute until softened. Add garlic & stir.
  • Stir in taco seasoning, oregano & chipotle.
  • Add lentils & broth. Bring to a boil, reduce heat & simmer about 30 minutes until lentils are soft & most liquid is reduced. You want saucy, not soupy, lentils.
  • Check for seasoning.

I developed this recipe when raising four children on a limited budget. My family likes this better than meat tacos. It has been a hit with guests as well. Anyone who likes lentils will enjoy this variation.

1 package red lentils or 1 package green lentil
1 onion, minced (use more or less to taste)
2 cloves garlic
favorite taco seasoning or homemade salsa
salt and pepper (optional)
sliced avocado
alfalfa sprout
chopped onion
grated cheese
sour cream
diced tomato
corn tortilla (You may use small flour Tortillas if you prefer)

Steps:

  • Cook lentils with the garlic and minced onions, according to package directions until they are the consistency of refried beans.
  • I use less water and add as I need it so I do not have to drain any water.
  • Add packaged taco seasoning or fresh salsa and salt and pepper.
  • The consistency should be thick.
  • Warm tortillas.
  • Add a spoon of lentil mixture, and your favorite garnishes.
  • Serve and enjoy.
  • I like to do a taco bar and let everyone make their own.
