OLD FASHIONED APPLESAUCE CAKE

Old Fashioned Applesauce Cake image

I like it how it doesn't "cheat" by using a packaged cake mix. This recipe is from "Simply Delicious"- A cookbook comprised of Herberger's Employee Family Recipes.

Provided by BeccaB3c

Categories     Dessert

Time 1h20m

Yield 16-20 serving(s)

Number Of Ingredients 21

2/3 cup shortening, softened
1 1/4 cups granulated sugar
1 cup brown sugar, packed
3 eggs
1 3/4 cups unsweetened applesauce
1/2 cup water
3 cups sifted flour
1/3 teaspoon baking powder
1 cup dates (or half of each) or 1 cup raisins (or half of each)
1 cup walnuts
1 3/4 teaspoons salt
1/4 teaspoon nutmeg
3/4 teaspoon allspice
1/2 teaspoon clove
1 1/4 teaspoons cinnamon
1 3/4 teaspoons baking soda
1 cup brown sugar, packed
1/4 cup milk
3 tablespoons butter, softened
1 teaspoon vanilla
1 1/2-2 cups confectioners' sugar

Steps:

  • Cream shortening, sugar, and eggs; add applesauce and mix well.
  • Stir dry ingredients into mixture, alternating with water.
  • Blend fruit and nuts into batter.
  • Pour into greased and floured 9"x13" pan.
  • Bake at 350 degrees for 55 to 60 minutes.
  • Cool in pan and frost.
  • Make frosting: Combine brown sugar, 1/4 cup milk and 3 tablespoons butter in top of double boiler.
  • Cook rapidly for about 3 minutes, stirring.
  • Cool to luke warm and add 1 teaspoon vanilla.
  • Beat in confectioner's sugar to right consistency.

Tips:

  • Use a combination of apples for a more complex flavor. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Peel and core the apples before grating them. This will help to prevent the applesauce from becoming too chunky.
  • Be sure to cook the applesauce until it is thick and bubbly. This will help to ensure that the cake is moist and flavorful.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will help to ensure that the cake is cooked through.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • Serve the cake at room temperature for the best flavor.

Conclusion:

Applesauce cake is a delicious and easy-to-make dessert that is perfect for any occasion. With its moist and flavorful crumb, sweet and tangy applesauce filling, and creamy frosting, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give applesauce cake a try.
