available at specialty foods shops and many supermarkets

Steps:

  • Preheat oven to 325°F.
  • In a bowl with an electric mixer beat whites with salt until very foamy and gradually beat in sugar, Worcestershire sauce, paprika, and cayenne. Stir in nuts and butter, combining well, and spread in a large shallow baking pan.
  • Bake nuts in middle of oven, stirring every 10 minutes, until crisp and golden, about 30 to 40 minutes. Spread nuts on a sheet of foil and cool. Break up nut clusters. Nuts may be made 1 week ahead and kept in an airtight container at room temperature.

Tips for Fancy Roasted Nuts:

  • Choose the Right Nuts: Select high-quality nuts that are fresh and flavorful. Avoid nuts that are stale or have an off odor.
  • Soak the Nuts: Soaking the nuts in water or a flavorful liquid (such as orange juice or spiced tea) enhances their flavor and makes them more tender.
  • Use a Variety of Spices: Experiment with different spices to create unique and flavorful nut mixes. Common spices include cinnamon, nutmeg, ginger, cumin, and chili powder.
  • Roast the Nuts Properly: Spread the nuts in a single layer on a baking sheet and roast them in a preheated oven at the recommended temperature. Stir the nuts occasionally to ensure even roasting.
  • Cool the Nuts: Allow the roasted nuts to cool completely before storing them. This will help them retain their crispness and flavor.
  • Store the Nuts Properly: Store the roasted nuts in an airtight container in a cool, dry place. Roasted nuts can be stored for up to two weeks, but they are best enjoyed within a few days.

Conclusion:

Fancy roasted nuts are a delicious and versatile snack that can be enjoyed on their own or used as an ingredient in various dishes. With a little creativity and experimentation, you can create your own unique nut mixes that are sure to impress your friends and family.
