1 box shortbread cookies (plain)
1/2 cup or 1/2 bar of Baker's Chocolate or fondue chocolate (approx. - depending on number of cookies)
1 jar peanut butter (you will not use the whole jar)
Chopped nuts or shaved chocolate (optional)

Steps:

  • Simply open a box of shortbread cookies. Brush off loose crumbs off cookies. Place cookies aside. Melt chocolate in small bowl in microwave according to instructions. (Usually one minute at a time and stir chocolate.)
  • Place a large sheet of wax paper aside on counter top. Using a butter knife put a thin layer of peanut butter on top of all the shortbread cookies. Once all the cookies are covered with peanut butter then you just dip the cookies in chocolate. You may have to flip cookies a few times in chocolate to get them well coated. After covering with chocolate, place them on the wax paper to harden. If you want you can put some chopped nuts or shaved chocolate on top of cookies. This will make them look good and also give some flavor. Allow cookies to harden on wax paper.
  • Once cookies are hardened (approx. 5-10 minutes) you can serve them or even put them in wrap and give them to friends as a gift. They are great with tea or coffee.

2-1/2 cups self-rising flour

125 g butter
60 g icing sugar
60 g cornflour
125 g plain flour
1 pinch salt

Steps:

  • Soften butter.
  • Place in a mixing bowl with the rest of the ingredients and knead well.
  • Roll tablespoon fulls of dough into balls, and flatten slightly on a lined biscuit tray.
  • Bake at 180C for 15 minutes, or until a light golden brown.
  • Be careful not to let them burn, they should only change colour slightly!

2 cups all-purpose flour
1 cup confectioners' sugar
1 cup cornstarch
¼ teaspoon salt

  • Work all the ingredients together with your hands until blended. Shape all of the dough into 1 inch balls.
  • Bake cookies on ungreased cookie sheets, 2 inches apart at 300 degrees F (150 degrees C) for 20 minutes.
  • Let cool 10 minutes then carefully lift with spatula to cake racks to cool. Store in air tight container with wax paper between layers. Cookies keep well.
