Categories     main-dish

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 10

1 cup low-sodium chicken broth
1 ounce dried porcini mushrooms
Kosher salt
1 pound farfalle pasta
3 tablespoons extra-virgin olive oil
1 large or 2 small shallots, sliced
1 teaspoon freshly ground black pepper
One 12-ounce bunch Swiss chard, center stems removed and leaves chopped into 1-inch pieces
1 cup mascarpone cheese, at room temperature (8 ounces)
2 store-bought rotisserie chicken breasts, diced into 1/2-inch pieces to yield 2 cups of meat

Steps:

  • Boil the broth and mushrooms over medium-high heat in a small saucepan. Turn off the heat and allow the mushrooms to soften in the liquid, about 20 minutes. Remove the mushrooms and coarsely chop. Reserve the liquid.
  • Bring a large pot of salted water to a boil over high heat. Cook the pasta until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup pasta water.
  • Heat the oil over medium-high heat in a large nonstick saute pan. Add the shallots mushrooms, 1 teaspoon salt and 1/2 teaspoon pepper. Cook until the shallots are soft, about 3 minutes. Add the chard in batches and cook until wilted, about 7 minutes. Sprinkle 1 teaspoon salt and the remaining 1/2 teaspoon pepper.
  • Remove the pan from the heat and add the mascarpone cheese. Stir until the mixture is smooth and creamy. Add the mushroom mixture, chicken and the reserved mushroom-cooking liquid to the pasta. Add reserved pasta water if necessary. Toss until all the ingredients are coated and serve.

Time 40m

Yield 4 servings

Number Of Ingredients 10

1 ounce dried porcini mushrooms
1/2 cup warm water
1/2 tablespoon extra-virgin olive oil
1/2 cup thinly sliced red onion
1 cup thinly sliced fennel bulb
2 tablespoons heavy cream
Salt and freshly ground black pepper
1/2 pound farfalle (bow-tie pasta)
1 tablespoon finely minced fennel tops
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Place the mushrooms in a bowl, add the water and set aside to soak for 30 minutes. Start bringing a large pot of water to a boil for the pasta.
  • Heat the oil in a large, heavy skillet. Add the onion and fennel and cook over medium-low heat until the vegetables just begin to brown.
  • While the vegetables are cooking, drain the mushrooms, reserving the liquid. Dry the mushrooms on a paper towel, slice them and add them to the pan. When they are heated through, strain and add the mushroom liquid. Cook over high heat for several minutes, until the liquid just moistens the vegetables. Stir in the cream and remove the pan from the heat. Season to taste with salt and pepper.
  • When the water has come to a boil add a generous pinch of salt and the farfalle. Cook the farfalle until it is al dente, about six minutes. Drain it thoroughly, then add it to the pan with the mushrooms and fennel.
  • Cook the farfalle with the vegetables, stirring gently, two to three minutes, until the ingredients are well blended and the cream has thickened and clings to the pasta. Stir in the fennel tops and cheese and serve.

Salt and freshly ground black pepper
1/2 pound farfalle (bow tie) pasta

  • Spread one-third of the farfalle in the baking dish. Sprinkle with half the remaining bread crumbs and spread with half the mushroom and radicchio mixture. Make another layer of farfalle, bread crumbs and vegetables, then top with another layer of farfalle. Spoon any liquid from the skillet over the farfalle and scatter the mozzarella over the top.
  • Bake about 20 minutes, until the cheese has melted and the casserole is bubbling.

FARFALLE WITH FOREST MUSHROOMS, PEAS, AND PARSLEY

Farfalle with Forest Mushrooms, Peas, and Parsley image

Categories     Milk/Cream     Mushroom     Pasta     Sauté     Vegetarian     Kentucky Derby     Pea     White Wine     Spring     Parsley     Bon Appétit

Yield Makes 12 servings

Number Of Ingredients 11

1/4 cup (1/2 stick) butter
4 large garlic cloves, minced
3 shallots, chopped
12 ounces shiitake mushrooms, stemmed, quartered
12 ounces crimini mushrooms, quartered
12 ounces chanterelle or crimini mushrooms, quartered
1 1/4 cups dry white wine
1 1/2 cups whipping cream
2 cups frozen peas
2/3 cup chopped fresh parsley
1 1/4 pounds farfalle (bow-tie pasta)

Steps:

  • Melt butter in large deep skillet over medium-high heat. Add garlic and shallots; sauté 1 minute. Add shiitake and crimini mushrooms and sauté 5 minutes. Add chanterelles; sauté until all mushrooms are tender, about 5 minutes longer. Add wine and boil until reduced by half, about 5 minutes. Add cream and simmer until liquid is reduced to sauce consistency, stirring occasionally, about 5 minutes. Stir in peas and parsley. Remove from heat. Season sauce with salt and pepper. Cover to keep warm.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking liquid. Return pasta to pot.
  • Add mushroom sauce to pasta and toss to coat, moistening with reserved pasta cooking liquid, if necessary.

Tips:

  • Use fresh ingredients: Fresh fennel and mushrooms will give your dish the best flavor. If you can't find fresh fennel, you can use 1/2 teaspoon of dried fennel seeds.
  • Don't overcrowd the pan: When cooking the mushrooms, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Use a good quality white wine: The white wine you use in this dish should be something you would enjoy drinking. A dry white wine, such as a Sauvignon Blanc or Pinot Grigio, will work well.
  • Don't overcook the pasta: Farfalle is a delicate pasta, so it's important not to overcook it. Cook it according to the package directions, or until it is al dente (still slightly firm to the bite).
  • Garnish with fresh herbs: Before serving, garnish your dish with fresh herbs, such as parsley, basil, or thyme. This will add a pop of color and flavor.

Conclusion:

This farfalle with fennel and mushrooms is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fennel and mushrooms add a lot of flavor to the dish, and the white wine sauce is creamy and flavorful. This dish is sure to please everyone at your table.
