Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter
3/4 cup tahini
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking soda
Sesame seeds (optional)

Steps:

  • Heat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, tahini, and both sugars together until light and fluffy. Add egg and vanilla, and mix on medium speed until well combined.
  • In a medium mixing bowl, sift flour and baking soda together. Add to the butter mixture, and beat just to combine.
  • Scoop out 2 tablespoons of dough, and shape into a ball. Roll in sesame seeds, if desired, for added crunch. Place on one of the prepared baking sheets. Repeat with remaining dough, placing scoops 3 inches apart. Dip the tines of a fork in warm water; press the dough balls lightly with the back of the fork to flatten them slightly (dip the fork back in the water for each dough ball, to prevent sticking).
  • Transfer to the oven, and bake until golden brown, 18 to 20 minutes, rotating the baking sheets between the oven shelves halfway through baking. Transfer baking sheets to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

FAST AND EASY ISRAELI TAHINI COOKIES

Fast and Easy Israeli Tahini Cookies image

A quick and simple Middle Eastern/Mediterranean hit. I've seen both little Jewish grandmothers in Jerusalem make these cookies and Bedouin women living in the middle of the desert. A great simple recipe that isn't too sweet, is very versatile and fast. Enjoy.

Tips:

  • For the best tahini cookies, use a smooth, creamy tahini. If your tahini is too thick, you can thin it out with a little bit of water or oil.
  • Be sure to chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
  • If you don't have a cookie scoop, you can use a tablespoon to drop the dough onto the baking sheet. Just be sure to space the cookies out evenly so that they have room to spread.
  • Bake the cookies until they are just set. The edges should be golden brown and the centers should be slightly soft. If you overbake the cookies, they will be dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will help them to hold their shape.

Conclusion:

Tahini cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their simple ingredients and rich, nutty flavor, they are sure to be a hit with everyone who tries them. So next time you are looking for a quick and easy cookie recipe, give these tahini cookies a try. You won't be disappointed!
