Egyptian version of Turkish Piyaz. Cooking and preparation time do not include soaking time overnight! Submitted for Visit Egypt / NAME forum May 2012.

Number Of Ingredients 12

1 cup navy beans
1 small red onion
1 cup parsley
2 tomatoes
1 tablespoon olive oil
1 tablespoon vinegar
1 tablespoon lemon juice
salt, to taste
pepper, to taste
1 garlic clove
1/4 teaspoon cumin
1 dash cayenne

Steps:

  • Soak beans overnight and cook without salt until soft, about 40-50 minutes (depends on which kind of bean you use).
  • Drain cooked beans.
  • Remove seeds from tomatoes, chop tomatoes.
  • Thinly slice onion.
  • Chop parsley.
  • For the dressing, combine olive oil, vinegar, lemon juice, salt and pepper to taste, cumin and cayenne.
  • Combine cooled beans, tomatoes, onions, parsley and dressing.
  • If it is too tart, add a little more olive oil.

5 packed cups (5 ounces) arugula
1 (15-ounce) can cannellini or great Northern beans, rinsed and drained
1/2 small red onion, thinly sliced
3 tablespoons capers, rinsed and drained
3 tablespoons fresh lemon juice (about 1 large lemon)
1 tablespoon maple syrup
1 teaspoon lemon zest
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Salad: In a large salad bowl, combine the arugula, beans, red onion, and capers.

½ cup pearl barley
½ cup long-grain white rice
1 cup canned black beans, drained
1 cup canned kidney beans, drained
1 cup whole corn kernels, cooked
½ cup chopped green onions
1 red bell pepper, chopped
¼ cup chopped fresh cilantro
8 leaves lettuce
¼ cup red wine vinegar
1 clove garlic, minced
1 teaspoon chili powder
½ teaspoon salt
¼ teaspoon crushed red pepper flakes
¼ teaspoon ground black pepper
½ cup olive oil

Steps:

  • In a large saucepan bring 2 cups of water to a boil. Stir in barley and reduce heat to medium-low, cover and simmer for 40 to 45 minutes or until tender. Let cool.
  • In a saucepan bring 1 1/2 cups water to a boil add the rice. Reduce heat to low and simmer, covered for about 20 minutes or until tender. Let cool.
  • In a large bowl, combine the cooled barley, rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.
  • To make dressing: In a small bowl, whisk together vinegar, garlic, chili powder, salt, red pepper flakes and black pepper. Whisk in oil and pour over salad and toss well. Transfer to a lettuce-lined bowl to serve.
