I found this recipe on an internet forum - inventer unknown. It is a boiled fruit loaf- super easy, and can all be mixed in the one pot. It is well liked by children and adults, and is nice with butter (not fat free!) Aparently if cut into 15 slices, 1 slice = 1.5 weight watchers points. This is great made with gluten free flour, it is also vegan.

180 g pitted dates (chopped with scissors- each date 3-4 x)
1/2 cup brown sugar
1 cup water
1 teaspoon bicarbonate of soda (baking soda)
1 carrot, grated (medium- large)
1 1/2 cups self raising flour (or 1 tsp baking powder per cup of normal flour)
1 teaspoon cinnamon
1/2 teaspoon cardamom (optional)
1 grated apple, also goes well (as well as the carrot)

Steps:

  • Combine dates, brown sugar, bicarb soda and water in a pot. Bring to boil, simmer for 1-2 mins (stir a few times) then turn off heat and leave to cool.
  • Preheat oven to 180 degrees Celsius Grease a 22x 11cm tin (or use baking paper).
  • Add carrot to date mix (I just grate straight into pot) a 1/2 or whole apple is also nice grated in too (I don't wait until date mix is totally cool).
  • Sift flour and spices together and add to mix. (I don't- I just chuck it all into the pot! Saves on dishes).
  • Mix well and spoon into loaf tin. You can add extra water if too dry to mix well.
  • Bake for 40-50 minutes Use a skewer to check if middle cooked.
  • Note- if using gluten free flour (not self raising) add 2- 2.5 teaspoons of baking powder + 1 tsp (optional) of guar gum.

1/2 teaspoon baking powder
1 teaspoon salt
4 ounces brown sugar, light
8 ounces dates, dried, seedless
3 ounces walnuts
1 egg
5 fluid ounces milk

Steps:

  • Preheat oven to 150°C (300°F).
  • Chop dates into small dice and chop walnuts.
  • Sift flour baking powder and salt into bowl, mix in the sugar dates and walnuts.
  • Lightly beat egg and milk together and stir into mixture.
  • Mix well until batter is smooth.
  • Cook in prepared loaf tin for approximately 45 - 60 minutes.
  • To keep moist, after it's cooled for half an hour or so, drape a clean tea towel over the cake.
  • You can slice up all the cake and freeze it wrapped in foil.

I made it and gave it to my parents without telling them it was healthy and my dad said it was the best fruitcake he'd tasted. It's really moist and yummy. It also works well with substitutions- I tried ground almonds for the cornmeal and chopped glace cherries for the raisins which came out really nice.

250 g chopped dates
2 small bananas or 1 large banana
85 g chopped pecans
200 g raisins
200 g sultanas
100 g fine cornmeal or 100 g polenta
2 teaspoons mixed spice
2 teaspoons baking powder
3 tablespoons dark rum
2 egg whites
banana chips, to decorate (optional)

Steps:

  • Heat oven to 180 degrees Celcius,160 degrees for fan oven. Line a 2lb loaf tin with non-stick baking paper. Put dates in a small saucepan with 200ml boiling water and simmer for 5 minutes Drain the liquid into a jug and put the dates in a food processor (or liquidize- I used a stick blender). Add the bananas and 100ml of the date liquid and puree. Mix the nuts, dried fruit, cornmeal, spice and baking powder in a large bowl. Add the date mixture and stir until combined.
  • Whisk the egg whites to soft peaks and fold into cake mixture. Tip into the tin (it will be quite full), then top with banana chips and sprinkle with extra sugar if using. Bake for 1 hour until golden and crusty and a skewer comes out clean. If it's browning too fast, cover with foil. Cool completely before slicing.
