Steps:
- add flours and salt into a food processor and start it
- slowly add milk through top opening until dough is formed
- dough should be moist but not too sticky
- transfer dough to floured surface and knead for 20-30 seconds
- divide dough into two parts
- roll each into a log and divide into 7 equal parts each
- dust and flaten each part into a disc
- roll out with a rolling pin into a thin tortilla 8-9 in. in diameter
- preheat a skillet on high heat
- (if you want to avoid using any oil you can use a nonstick skillet--tortillas will still be great but a little dryer; otherwise you can use a cast iron skillet)
- if using oil, use a couple of drops of it for each tortilla, evenly spreading it out on the skillet; alternatively you can drip oil on a plate and spread it over tortillas before placing them on the hot skillet
- turn heat to medium-high (make sure it's not too low, otherwise tortillas will turn out too dry!)
- fry 30 seconds on each side--tortillas should bubble up
- then 10 more seconds on each side
- repeat for all 14 tortillas
FAT FREE WHOLE WHEAT TORTILLAS
I wanted tortillas to go with tonight's dinner but was out of them. So I went searching for a recipe that did not contain any fat. I found this one, and tweaked it a bit, in one of my favorite cookbooks "500 Fat Free Recipes." My husband could not get enough of them. We dipped them into soup and made bean burritos out of them.

EASY WHEAT TORTILLAS
Light blend of whole wheat and all-purpose flours make a light, lower fat, and easy alternative to a basic flour tortilla. This recipe came together one afternoon when I ran out of tortillas midway through a dish I was making. The family enjoyed them so much, I will make them from scratch from now on.

Tips:
- Use quality ingredients: Start with high-quality whole wheat flour and fresh, filtered water. This will ensure that your tortillas have the best flavor and texture.
- Mix the dough properly: Be sure to mix the dough until it is smooth and elastic. This will help to prevent the tortillas from becoming tough.
- Knead the dough thoroughly: Kneading the dough for at least 5 minutes will help to develop the gluten and make the tortillas more pliable.
- Let the dough rest: After kneading the dough, let it rest for at least 30 minutes. This will allow the gluten to relax and make the dough easier to work with.
- Roll the dough thinly: The thinner you roll the dough, the more tender the tortillas will be. However, be careful not to roll the dough too thinly, or it will tear.
- Cook the tortillas evenly: Cook the tortillas over medium heat on a lightly greased griddle or skillet. Be sure to flip the tortillas frequently so that they cook evenly.
- Serve the tortillas warm: Tortillas are best served warm. You can wrap them in a damp cloth or store them in a tortilla warmer to keep them fresh.
