FESTIVE HOT BROCCOLI DIP
I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! Hope you enjoy.

- Blanch the broccoli: Blanching the broccoli helps to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the broccoli and immediately transfer it to a bowl of ice water to stop the cooking process.
- Season the broccoli: Once the broccoli is blanched, season it with your favorite seasonings. Some popular options include olive oil, salt, pepper, garlic powder, and lemon zest.
- Cook the broccoli: There are many different ways to cook broccoli, including steaming, roasting, sautéing, and grilling. Choose a cooking method that you like and that will result in the desired texture. For example, steaming or roasting will produce tender-crisp broccoli, while sautéing or grilling will produce more caramelized broccoli.
