Fresh Tomato Salad with Onions, Feta and Olives image

Categories     Salad     Olive     Onion     Tomato     No-Cook     Picnic     Low Carb     Quick & Easy     Feta     Summer     Bon Appétit

Yield Serves 6

Number Of Ingredients 7

5 ripe large tomatoes, cut into 1/3-inch-thick rounds
1 small red onion, thinly sliced
1/4 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
4 ounces feta cheese, crumbled
1/4 cup Kalamata olives or other brine-cured black olives, pitted
1 tablespoon chopped fresh parsley

Steps:

  • Arrange tomatoes on platter. Top with onion slices. Drizzle oil and vinegar over. Sprinkle with salt and pepper. Let stand at room temperature at least 1 hour. Sprinkle cheese, olives and parsley over salad and serve.

Tips:

  • Choose ripe, flavorful tomatoes. This will ensure that your salad is packed with flavor.
  • Use fresh basil. Dried basil will not provide the same level of flavor and aroma.
  • Use good quality feta cheese. Feta cheese that is too crumbly or dry will not hold its shape well in the salad.
  • Don't overdress the salad. A light vinaigrette is all you need to enhance the flavors of the ingredients.
  • Serve the salad immediately. This is a dish that is best enjoyed fresh.

Conclusion:

This feta tomato basil and olive salad is a refreshing and flavorful salad that is perfect for a summer meal. It is easy to make and can be tailored to your own preferences. Whether you are looking for a light lunch or a side dish for your next barbecue, this salad is sure to please.
