2 cloves crushed garlic
1/4 cup diced onion
1/4 cup red wine
2 tomatoes, skinned,seeded and chopped
1/4 cup Greek olive, pitted and chopped
2 tablespoons fresh basil, chopped
1/4 cup feta cheese

Steps:

  • Salt and pepper chicken and dredge in flour.

  • Add olives and cook for another minute.
  • Add salt and pepper to taste.
  • Remove pan from heat and add basil and feta cheese.
  • Place chicken breasts on serving plates and top with tomato olive mixture.

Tips:

  • Use fresh, ripe ingredients: Fresh tomatoes and olives add the best flavor to this dish. If you can, use tomatoes that are in season and have a deep red color. Kalamata olives are a good choice for their briny, salty flavor.
  • Don't overcrowd the pan: When cooking the chicken, make sure to give it enough space in the pan so that it can brown evenly. If you crowd the pan, the chicken will steam instead of brown.
  • Use a good quality feta cheese: Feta cheese is the star of this dish, so it's important to use a good quality cheese. Look for a cheese that is creamy and has a tangy flavor.
  • Serve with your favorite sides: This dish can be served with a variety of sides, such as rice, pasta, or roasted vegetables. You could also serve it with a side salad or a crusty bread.

Conclusion:

This feta tomato olive chicken is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The chicken is tender and juicy, and the feta cheese, tomatoes, and olives add a delicious flavor. This dish is sure to be a hit with your family and friends.
