Steps:

  • Heat oven to 375ºF.
  • Cook pasta in large saucepan as directed on package, adding spinach to the boiling water for the last minute.   • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.

1/2 teaspoon dried herbes de Provence or dried rosemary, crumbled
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1/4 cup brandy

3 ounces soft mild goat cheese such as Montrachet, crumbled (about 1/3 cup)
3 ounces Gorgonzola cheese, crumbled (about 3/4 cup)
1/2 cup freshly grated Parmesan cheese (about 2 ounces)
3/4 pound tricolored rotelle (corkscrew-shaped pasta) or other multicolored pasta

Steps:

  • In a large heavy skillet cook garlic and herbs in butter and oil over moderate heat, stirring, until garlic is softened but not browned. Remove skillet from heat. Add brandy and ignite, being careful as flames shoot up. Shake skillet gently until flames die out. Return skillet to moderate heat and stir in cream.

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour

1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F.

½ (8 ounce) package baby carrots, or to taste
2 tablespoons butter
2 tablespoons all-purpose flour
2 ½ cups heavy cream
½ (8 ounce) package fontina cheese, shredded
1 (4 ounce) log goat cheese, broken into chunks
1 (16 ounce) package spaghetti
1 clove garlic, diced
2 tablespoons olive oil
4 bunches Swiss chard, stems removed
½ bunch baby arugula, or to taste
9 leaves fresh basil, divided
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place carrots in a large pot with lightly salted water to cover. Bring to a boil and cook carrots until fork-tender, 7 to 10 minutes. Drain.
  • Meanwhile, melt butter in a saucepan over medium heat. Add flour and mix well. Add heavy cream and bring to a simmer over medium heat. Cook and stir until a thick roux forms, about 10 minutes.
