FLORENTINE STUFFED CHICKEN

Florentine Stuffed Chicken image

Bone-in chicken breasts stuffed with spinach, cheese and onion and baked until tender. This is a simple recipe that I cooked up myself. It is, however, based on some pretty standard Greek/Italian dishes. Everyone loves this and it can be wonderful for company - even people who don't usually like spinach find that they like this dish! Serve with your favorite shaped pasta, if desired.

Time 45m

Yield 4

Number Of Ingredients 6

1 (10 ounce) package frozen chopped spinach, thawed and drained
¼ cup grated Parmesan cheese
½ cup chopped onion
4 bone-in chicken breast halves, with skin
2 cups spaghetti sauce
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the spinach, Parmesan cheese and onion and mix thoroughly. Stuff the cavity of each chicken breast with 1/4 of the mixture. • Lay stuffed breasts in a 9x13 inch baking dish, and cover with the sauce.
  • Bake at 350 degrees F (175 degrees C) for about 35 minutes, or until chicken is cooked through and tender; sprinkle with mozzarella cheese and bake another 5 minutes, until cheese is melted.

FIESTA CHICKEN SANDWICH

Fiesta Chicken Sandwich image

This is a copy cat of a sandwich on Eat N Park's menu, one of my favorites! Very quick and easy. Substitute low fat cheese for a healthier version. Also good without the bun for a main course, served with Spanish rice. I use my George Foreman grill to cook the chicken, but you can use an outdoor grill or skillet.

Tips:

  • Mise en place: Before you start cooking, gather all of your ingredients and prep them. This will make the cooking process smoother and faster.
  • Use a heavy bottom pan: To prevent the chicken from sticking, use a heavy-bottomed pan that distributes heat evenly.
  • Brown the chicken in batches: If you are cooking a large amount of chicken, brown it in batches to prevent crowding the pan and steaming the chicken.
  • Season the chicken well: Use a generous amount of salt and pepper to season the chicken. You can also add other spices and herbs to taste.
  • Cook the chicken until it is cooked through: Use a meat thermometer to check the internal temperature of the chicken. The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Make the stuffing while the chicken is cooking: This will save you time and energy.
  • Use a variety of vegetables in the stuffing: This will add flavor and texture to the dish.
  • Season the stuffing well: Use a generous amount of salt and pepper to season the stuffing. You can also add other spices and herbs to taste.
  • Stuff the chicken and bake: Once the chicken and stuffing are cooked, stuff the chicken with the stuffing and bake until the chicken is golden brown and the stuffing is heated.

Conclusion:

Fiesta Chicken n' Stuffing is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is juicy and flavorful, and the stuffing is moist and savory. This dish is sure to be a hit with your family and friends.
