2 lbs lean ground beef
1 (6 ounce) package chicken flavor stuffing mix
1 cup water
2 eggs, lightly beaten
2 teaspoons chili powder
black pepper
1/2 cup thick & chunky salsa, divided
3/4 cup monterey jack and cheddar cheese blend, shredded

Steps:

  • Preheat oven to 375ºF.
  • Mix all ingredients, reserve 1/4 cup each of the salsa and the cheese.
  • Shape into oval loaf in a 13x9 baking dish, top with the remaining 1/4 cup salsa.
  • Bake 1 hour or until cooked through.
  • Sprinkle evenly with the cheese; continue baking 5 minutes or until cheese is melted.
  • Let stand 5 minutes before cutting into eight slices to serve.

1 pound lean ground beef
1 pound lean ground pork
¾ cup warm water
2 slightly beaten eggs
⅓ cup picante sauce
1 (1 ounce) package dry onion soup mix
¾ cup dry bread crumbs
¼ cup minced green bell pepper
1 (10.75 ounce) can condensed nacho cheese soup (such as Campbell's® Fiesta Nacho Cheese Soup)

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Mix the beef, pork, water, eggs, picante sauce, onion soup mix, bread crumbs, and bell pepper together in a mixing bowl until evenly blended. Pack into the prepared loaf pan, then poke holes into the loaf with a fork nearly to the bottom of the pan. Pour the undiluted cheese sauce over the top of the roast and spread evenly.

1 1/2 lb lean ground beef
3/4 c unseasoned dry bread crumbs
1 egg, beaten
1 can(s) 4-oz can chopped green chilies, drained
1/2 c cheddar cheese, shredded
1 pkg taco seasoning packet 1.25 oz.
1 medium tomato, chopped
1/2 c green onions, chopped
2 Tbsp ketchup
1 Tbsp salsa
1/2 tsp seasoned salt

Steps:

  • 1. In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.
  • 2. Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.
