Using fewer habanero peppers can reduce the spiciness in this extremely hot habanero hot sauce. The sauce works wonders as a pick-up for Bloody Mary drinks. Flavors meld wonderfully and the sauce keeps nicely for a long time. Warning: A dash is all you need and it is best to use gloves when handling the habanera peppers.

1 (15.5 ounce) can sliced peaches in heavy syrup
½ cup dark molasses
½ cup yellow mustard
½ cup light brown sugar
1 cup distilled white vinegar
2 tablespoons salt
2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground ginger
½ teaspoon ground allspice

Steps:

  • Place the peppers, peaches, molasses, mustard, brown sugar, and vinegar into the container of a food processor or blender. Measure in the salt, paprika, pepper, cumin, coriander, ginger and allspice. Blend until liquefied. Pour into clean jars, and refrigerate overnight before using.

1/2 cup peanut oil
1 tablespoon black peppercorn
1 tablespoon ground star anise, plus whole pieces, for garnish
1 teaspoon coriander seeds
1/4 teaspoon Szechuan peppercorns
1/2 teaspoon red curry paste
1 tablespoon tamarind paste
1 tablespoon honey
1/2 cup Madeira
3/4 cup veal stock
1 pound beef tenderloin
1 tablespoon rice wine vinegar
1/2 tablespoon Chinese powdered mustard
2 tablespoons butter
Wasabi Mashed Potatoes, recipe follows
1 pound baking potatoes, like russets, peeled
Salted water
4 tablespoons butter, cut into pieces
1/4 cup heavy cream, heated
1 tablespoon roasted garlic puree
1/2 pound spinach, stems removed
1 1/2 teaspoons wasabi
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Preheat a grill.
  • In a saucepan, heat oil, black peppercorns, star anise, coriander seeds, and Szechuan peppercorns for 1 minute until aromatic. Stir in red curry paste, tamarind paste, and honey. Deglaze with Madeira and reduce until syrupy. Add the veal stock and continue to reduce in half. Transfer to a blender and process to a puree. Strain and set aside.
  • Over hot grill, cook the tenderloin until grill marks appear on all sides. Transfer to a saute pan and pour in half of the strained sauce. Roast in the oven for 4 to 5 minutes or until desired doneness.
  • Transfer the remaining sauce to a saucepan and cook over medium heat. Reduce until thickened. In a cup, dissolve the powdered mustard in rice wine vinegar. Whisk in mustard and finish sauce with the butter.
  • To serve, cut the steak into thin slices. Nap with Madeira Mustard Sauce and serve with Wasabi Mashed Potatoes garnished with a whole star anise.
  • Cut the potatoes into large pieces of equal size. Cover with salted water. Bring to a boil and cook until tender. Drain thoroughly. Pass through a food mill and whip in the butter, hot cream and roasted garlic puree.
  • Blanch the spinach in boiling salted water for 10 seconds. Refresh in ice water. Drain thoroughly. Transfer to a blender and add wasabi powder. Process to a puree. Stir into warm mashed potatoes. Season with salt and pepper, to taste.

3 cups water
3 tablespoons vinegar
3 tablespoons finely minced canned jalapeno slices
1 tablespoon chili powder (Mexican, if you have it)
1 tablespoon dried onion flakes
2 teaspoons salt
2 teaspoons cornstarch
1 teaspoon cayenne pepper
1 teaspoon sugar
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

Steps:

  • Combine the tomato paste and water in a saucepan.
  • Whisk until smooth.
  • Add the remaining ingredients to the tomato mixture.
  • Heat over medium/high heat until it begins to boil.

4 Tbsp Soy Sauce

  • Whisk all ingredients together in a bowl. You can even find a deep container and simply pulse with a hand blender a few times and set it aside. Also can be prepared to that point, then put into a pot to let cook on a low heat for 10-15 mins, just lightly simmering. 8 boneless, skinless chicken breast halves
Salt
Freshly ground black pepper
12 Roma (plum) tomatoes, halved
4 medium zucchini, halved lengthwise
1 lemon, juice and zest
1 teaspoon dried oregano
2 tablespoons balsamic vinegar
2 teaspoons hot sauce
1 teaspoon chili powder

Steps:

  • Preheat oven to 400 degrees F. Coat 2 large baking sheets with cooking spray.
  • Season chicken with salt and pepper and place on prepared baking sheet. Arrange tomatoes on second baking sheet. Arrange zucchini next to tomatoes, flesh side up. Season tomatoes and zucchini with salt and pepper. Season zucchini with lemon juice, lemon zest and oregano. Place everything in the oven and roast 30 minutes.
  • In a blender, combine 6 roasted tomatoes, balsamic vinegar, hot sauce, and chili powder. Process until smooth. Serve 4 chicken breast halves with this meal, smothered in roasted tomato sauce. Serve half of the zucchini and reserve the extra chicken, tomatoes and zucchini for other meals.

1 tablespoon neely's barbeque seasoning (Neely's Barbeque Sauce)
1 tablespoon crushed red pepper flakes
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon pepper
12 whole chicken wings, cut apart at the joint
3 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 teaspoon black pepper
2 cups all-purpose flour
vegetable oil, for deep frying (or peanut oil)
1 cup mayonnaise
2 scallions, green and white parts, finely chopped
2 tablespoons prepared horseradish (if you don't like horseradish, leave it out or add 2 tbls. crumbled bleu cheese)
1/4 cup chili sauce
1/4 teaspoon cayenne powder

Steps:

  • Spicy Chicken Seasoning:.
  • In a small bowl, whisk together the Neely's Barbeque seasoning, red pepper flakes, black pepper, cayenne, poultry seasoning, and lemon pepper. Reserve 2 tbls. of this mixture in a separate bowl.
  • Rinse the chicken wings in cold water, then place them in a shallow baking dish and pat dry with paper towels.
  • Sprinkle wings evenly with the Spicy Chicken Seasoning, cover the dish with plastic wrap and chill for 1 hour.
  • Spicy Chicken Batter:.
  • Whisk the eggs, hot sauce, red pepper flakes, black pepper, and cayenne together in a mixing bowl. Place the flour in a shallow pie plate.
  • Heat the oil in a deep fryer or a Dutch oven(1 1/2 inches deep) over medium high heat until it reaches 350*F. on a deep fat thermometer.
  • Dip the chicken wings in the egg mixture, shaking off the excess, then in the flour. Keep one hand dry to make the process neater. Place half the wings in the hot oil and fry 8-10 minutes, turning occasionally, until cooked through and golden brown. Use tongs to move the wings to a paper towel lined plate.
  • Let the oil return to cooking temperature before adding the next batch. For extra hot wings, sprinkle them with the reserved seasoning.
  • Serve with Horseradish Dipping Sauce:.
  • Mix all the ingredients for the dipping sauce in a small bowl, and chill until needed. Enjoy!

1 cup premium bourbon
32 ounces honey
1 (16 ounce) jar picante sauce
1 (16 ounce) jar hot salsa

1 cup tomato-vegetable juice cocktail
2 tablespoons ground black pepper

Steps:

  • In a large saucepan over medium heat, saute the onion and garlic for 10 to 15 minutes, or until onion is caramelized. Reduce heat to low and pour in about 1 cup of bourbon to deglaze the pan. Return saucepan to medium high heat, add the remaining bourbon, and bring to a slow boil for 5 to 10 minutes, allowing the alcohol to cook out of the bourbon.
  • Add the honey, picante sauce, hot pepper sauce, tomato paste, tomato-vegetable juice and ground black pepper and stir well. Bring this mixture to a slow, rolling boil for about 5 to 10 minutes. Remove from heat, cover and cool in the refrigerator.
  • Marinate your meat in a separate large, nonporous bowl for 3 to 4 hours, pouring sauce over meat. Boil remaining sauce for 10 minutes and serve with meat, if desired. Discard any excess marinade.

1 cup Sauvignon Blanc
1 tablespoon grated fresh ginger
1 tablespoon olive oil
1 teaspoon ground black pepper
18 cloves garlic
1 onion, sliced, plus 2 whole onions
One 8-pound goose, aged for 1 week
1 teaspoon ground ginger
6 bay leaves
Sea salt and freshly ground black pepper
2 cups chicken stock
1 bunch fresh parsley
2 tablespoons whole black peppercorns
1 cup 1/2-inch chunks fingerling potatoes
1 cup 1/2-inch chunks rutabaga
1 cup 1/2-inch chunks turnips
4 shallots
3 blood oranges
2 ounces cassis syrup
2 ounces limoncello
2 ounces butter

Steps:

  • Add the wine, fresh ginger, olive oil, pepper, 4 cloves garlic and sliced onions to a large bowl and toss well. Add goose, cover and leave in fridge, turning goose once a day, for 2 days.
  • Remove goose from marinade. Leave at room temperature for 2 hours.
  • Prepare a roasting pan with a rack. Add ground ginger, 3 bay leaves and 2 cups water.
  • Pat dry, and rub goose with salt and pepper.
  • Heat roasting pan on low heat until water is simmering. Place goose on rack. Cover pan tightly with foil. Steam goose on low for 45 minutes.
  • Preheat the oven to 375 degrees F.
  • Uncover roasting pan and remove and reserve fat in the pan. Clean pan and place goose on the rack.
  • Bake goose until legs can be detached by hand, about 1 hour 30 minutes. Remove breasts and legs. Increase the oven to 400 degrees F.
  • Chop carcass. Add to simmering chicken stock in a large stockpot with peppercorns, whole onions, 6 cloves garlic and remaining 3 bay leaves. Cook for 3 hours. Skim regularly. Strain and reduce to 2 cups.
  • Add the potatoes, rutabaga and turnips to a large pot of simmering salted water. Cook until tender.
  • Add the goose fat to a roasting pan, then add the vegetables, shallots and remaining 8 cloves garlic and roast, turning occasionally, until golden brown. Remove vegetables from fat and keep hot.
  • Reheat the goose and keep warm with vegetables.
  • Make blood orange sauce: Zest 2 blood oranges. Cut away the remaining white pith, then cut the segments free from the membranes. Juice the remaining blood orange.
  • Add cassis syrup and 1/2 cup blood orange juice to a saucepan. Cook until syrupy and lightly golden, then add limoncello. Add the goose stock and butter. Add blood orange sections at last minute.
  • Carve goose, place on a platter and garnish with vegetables and blood orange sauce.

4 pork chops (each about an inch thick)

2 -3 garlic cloves, finely chopped
1 bunch scallion, cut into one-inch pieces
2 tablespoons red wine vinegar or 2 tablespoons white wine vinegar
2 tablespoons brown sugar
28 ounces can diced fire-roasted tomatoes

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the pork chops with salt and freshly ground black pepper, and sear them in the hot pan until golden brown, about 3 minutes per side. Remove the chops to a plate and cover them with foil.
  • To the same pan the chops were cooked in, add the garlic and scallions. Cook until the scallions begin to get tender, 3-4 minutes.

2 Tbsp apple cider vinegar
1 Tbsp garlic chile sauce
1 tsp garlic powder

4 ancho chiles (dried poblanos), stems and seeds removed
3 cloves garlic
2 tablespoons chile soaking water, or more as needed
1 1/2 cups sour cream
Kosher salt and freshly ground black pepper

Steps:

  • Add 4 cups of water to a medium pot over high heat and bring to a boil. Put the ancho chiles in a medium bowl and pour in the boiling water. Use a plate to weigh down the chiles so they remain submerged. Soak until softened, about 20 minutes. Add the chiles, garlic, 2 tablespoons of the chile soaking water, and the sour cream to a blender and blitz until smooth. Add more of the soaking water, if needed, for consistency. Season with salt and pepper, to taste. Transfer to a bowl or jar and store covered in the refrigerator.

8 -10 large tomatillos
4 jalapeno peppers
4 habanero peppers
4 garlic cloves
2 pinches salt (I use kosher, and usually have to add a little more at the end)

Steps:

  • Boil tomatillos and peppers in water for about 10 minutes, or until the green color of the tomatillos and jalapenos turn from a slick green to a dull green (You want them to be soft, but not too mushy).
