Rigatoni al Segreto (Rigatoni with Secret Sauce) image

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

Tips for Making the Best Five-Cheese Rigatoni

  • Choose the right pasta. Rigatoni is a classic choice for this dish, as its large tubes hold the cheese sauce well. However, you can also use other short pastas, such as penne or fusilli.
  • Use a variety of cheeses. The five cheeses in this recipe provide a complex and flavorful sauce. Be sure to use a combination of hard and soft cheeses, as well as cheeses with different flavor profiles.
  • Cook the pasta al dente. This means that the pasta should be cooked until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and will not hold the cheese sauce well.
  • Make the cheese sauce ahead of time. This will give the flavors time to meld together. You can make the sauce up to 2 days in advance, and then reheat it gently over low heat before serving.
  • Serve the pasta with a sprinkle of fresh herbs. This will add a pop of color and flavor to the dish. Basil, parsley, and oregano are all good choices.

Conclusion

Five-cheese rigatoni is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. With its creamy cheese sauce, tender pasta, and flavorful herbs, this dish is sure to please everyone at the table.
