1 1/2 shots Absolut citron vodka
1 splash galliano herbal liqueur
1/2 slice lemon
1/4 teaspoon sugar
1/4 teaspoon rum, 151 proof

Steps:

  • Pour absolut citron into a shot glass and top off with a splash of galliano. Place one half lemon slice flat on the rim of the shot glass, put some sugar on the slice and soak the sugar with 151 proof rum.
  • Just before drinking, ignite the sugar. Blow the flame out when it seems to caramelize the sugar. Lick the sugar off the lemon slice, down the vodka mixture, then either suck the juices or bite the pulp of the lemon.

Confectioners' sugar, for rimming the glass
Lemon wedge, for rimming the glass
1 1/2 ounces vodka
1 ounce Cane Sugar Simple Syrup, recipe follows
3/4 ounce fresh lemon juice
1 teaspoon turbinado sugar, such as Sugar in the Raw
3/4 ounce sweet sparkling white wine, such as Moscato d'Asti
Lemon slice, for garnish
1 cup pure cane sugar

Steps:

  • Put some confectioners' sugar on a plate. Rim a cocktail coupe or martini glass by rubbing the lemon wedge lightly around the rim, then dipping the rim into the confectioners' sugar.
  • Put the vodka, Cane Sugar Simple Syrup, lemon juice and turbinado sugar in a cocktail shaker, add large ice cubes and shake vigorously. Add the sparkling white wine and tumble roll (pour back and forth between two containers) once to mix throughout. Double-strain into the prepared glass, add a lemon slice to garnish and serve immediately.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

3 ounces anejo tequila
1 1/2 ounces lime juice
1 1/2 ounces triple sec, such as Cointreau
1 teaspoon agave syrup
2 tablespoons granulated sugar
1/4 teaspoon salt
4 lime round slices
4 sugar cubes
1/2 ounce rum, such as Bacardi 151

Steps:

  • In a cocktail shaker with ice, add the tequila, lime juice, triple sec and agave syrup. Shake vigorously to combine. Strain into 4 tall shot glasses.
  • Mix the sugar and salt together onto a small plate. Dip each lime slice into the sugar mixture, shaking off any excess. Place a slice of lime on top of each of the shot glasses, then place a sugar cube on top of each lime. Pour a dash of the rum over each sugar cube. Using a long match or fire starter, ignite the sugar cubes, and when the sugar begins to caramelize, blow out the flame. Fold the lime slice and drop it into the shot with the sugar cube, and serve immediately.

4 cups vodka (may use Absolut Citron for a more intense lemon flavor)
2/3 cup water
2/3 cup fresh lemon juice
2/3 cup superfine sugar
lemon slices or lemon wedge

Steps:

  • Add the first 4 ingredients to a large pitcher (55 oz.).
  • Stir to dissolve the sugar.
  • Cover and chill for at least 4 hours.
  • Moisten the rim of cocktail glasses with water or lemon juice; dip rim of glasses in granulated sugar.

1 tbsp white caster sugar
zest of ½ a lemon
50ml vodka
25ml triple sec
25ml lemon juice
handful of ice

Steps:

  • Put 1 martini glass in the fridge to chill. Mix the white caster sugar with the finely grated zest of the lemon, and set aside.
  • Pour the vodka into a cocktail shaker and add the triple sec, lemon juice and a handful of ice. Shake really well until the outside of the shaker feels cold.
  • Dip the rim of the chilled glass in water, shake off the excess then dip into the sugar and lemon zest mix.
