FLANK STEAK WITH CUCUMBER-PEPPERONCINI RELISH

Flank Steak With Cucumber-Pepperoncini Relish image

I got this recipe from Cooking Light and it is fabulous. Since it is meant for lighter fare, I tried the fat-free feta (recipe didn't call for fat-free version) and it did ruin the taste, so I recommend using regular feta. The recipe calls for bottled minced garlic and a pickled pepperoncini pepper, for some reason I couldn't add that to the ingredient list, so please keep that in mind when gathering your ingredients. I hope you enjoy.

SLOPPIED FLANK STEAK SANDWICHES

Sloppied Flank Steak Sandwiches image

I'm not a fan of ground beef, but I like the flavor of sloppy joes. This recipe incorporates the flavor of the classic sandwich with the lean cut of flank steak and the ease of a slow cooker.

Time 4h15m

Yield 6

Number Of Ingredients 11

1 ½ pounds beef flank steak
1 tablespoon steak seasoning (such as Montreal Steak Seasoning®)
1 tablespoon olive oil
¼ cup brown sugar
1 small onion, chopped
1 small red bell pepper, chopped
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
6 hamburger buns, split and toasted

Steps:

  • Sprinkle the beef flank steak with steak seasoning on both sides. Heat olive oil in a skillet over medium heat until the oil shimmers, and place the flank steak into the hot oil. Quickly brown the steak on both sides, about 5 minutes per side. Set the beef aside.
  • Stir brown sugar, onion, red bell pepper, apple cider vinegar, Worcestershire sauce, tomato sauce, and tomato paste together in a slow cooker until the brown sugar dissolves. Place the flank steak into the slow cooker, immersing it in the sauce. Set the cooker on on High and cook 4 hours, or set on Low and cook 8 hours.
  • To serve, shred the meat with 2 forks, or remove the meat, chop, and return to the sauce. Toast buns, and serve the sloppied steak on the toasted buns.

FRESCA RELISH

Fresca Relish image

This relish is a super healthy way to get your veggies! You can easily make it a dip or play around with the chop size for an alternative to conventional salsa. I love it on fish tacos or a side dish with a light menu. Add herbs like parsley or cilantro for a different taste to suit your meal.

Tips:

  • Choose the right flank steak. Look for a flank steak that is about 1 1/2 inches thick and has good marbling.
  • Marinate the flank steak. Marinating the flank steak in a flavorful marinade will help to tenderize it and add flavor. You can use a variety of marinades, such as a simple olive oil and garlic marinade, a soy sauce and brown sugar marinade, or a yogurt and spice marinade.
  • Cook the flank steak over high heat. Flank steak is best cooked over high heat so that it can quickly caramelize on the outside and stay tender on the inside. You can grill, pan-sear, or broil the flank steak.
  • Let the flank steak rest before slicing. After cooking the flank steak, let it rest for a few minutes before slicing. This will help the juices to redistribute throughout the steak, making it more tender and flavorful.
