Quick & simple "cookie" recipe that requires no baking. Mom used to make these often, and I would always steal cookies before they had fully cooled and set (you know what I'm talking about!)

Time 5m

Yield 48 cookies, 48 serving(s)

Number Of Ingredients 7

2 cups white sugar
1/2 cup milk
1 teaspoon vanilla (optional)
1/2 cup butter or 1/2 cup margarine
1/2 cup cocoa
1 cup coconut
3 cups oatmeal

Steps:

  • Heat sugar, milk, vanilla, cocoa and butter to boil.
  • Boil for 3 minutes only (use a timer).
  • Take pot off stove.
  • Mix in remaining ingredients.
  • Drop by spoonful onto ungreased waxed paper.
  • Let cool before eating.
  • Makes 4 dozen.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the drops will taste. Look for chocolate with a cocoa content of at least 70%.
  • Don't overmix the batter. Overmixing will make the drops tough. Mix just until the ingredients are combined.
  • Chill the batter before baking. This will help the drops hold their shape.
  • Bake the drops until they are just set. Over-baked drops will be dry and crumbly.
  • Let the drops cool completely before serving. This will help them firm up and develop their full flavor.

Conclusion:

Flourless chocolate coconut drops are a delicious and easy-to-make treat that are perfect for any occasion. They are flourless, gluten-free, and can be made dairy-free and vegan with a few simple substitutions. With their rich chocolate flavor and chewy texture, these drops are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give flourless chocolate coconut drops a try.
