1 1/2 cups chopped pecans
2 cups Gold Medal™ all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, melted
2 cups sugar
2 eggs
2 teaspoons vanilla
2 1/2 lb Granny Smith apples (about 4 large), peeled, cut into 1/4-inch wedges
1 cup butter
1 box (16 oz) powdered sugar
1/4 cup milk

Steps:

  • Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool.

In large bowl, stir together melted butter, sugar, eggs and 1 teaspoon of the vanilla until blended. Stir in flour mixture just until blended. Stir in apples and 1 cup of the toasted pecans. (Batter will be very thick, similar to cookie dough.) Spread batter in pan.
  • Bake 45 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on cooling rack.
  • Meanwhile, in 1-quart heavy saucepan, cook 1 cup butter over medium heat 6 to 8 minutes, stirring constantly, until butter begins to turn golden brown. Immediately remove from heat and pour into small bowl. Cover; refrigerate 1 hour or until butter begins to solidify.
  • Beat browned butter with electric mixer on medium speed until fluffy. Gradually add powdered sugar alternately with milk, beating on low speed until blended. Stir in remaining 1 teaspoon vanilla. Frost cake. Sprinkle with remaining 1/2 cup toasted pecans. Store covered in refrigerator.

FRESH APPLE CAKE WITH BUTTER PECAN GLAZE RECIPE - (4.4/5)

FRESH APPLE CAKE WITH BUTTER PECAN GLAZE Recipe - (4.4/5) image

Provided by cecelia26_

Number Of Ingredients 19

Apple Cake:
◾3 cups White Lily all-purpose flour*
◾2 teaspoons ground cinnamon
◾1 teaspoon baking soda
◾1/2 teaspoon salt
◾2 cups firmly packed brown sugar
◾1 1/2 cups vegetable oil
◾3 large eggs, lightly beaten
◾4 cups grated apples, about 4 large
◾1 cup chopped pecans
◾2 teaspoons vanilla extract
Butter Pecan Glaze:
◾1/4 cup butter
◾1/2 cup pecan halves
◾3/4 cup firmly packed brown sugar
◾1/4 cup heavy cream
◾1/4 cup corn syrup
◾1/8 teaspoon orange extract (optional)
White Lily has a low protein content, so if you're using another brand of all-purpose flour use just 2 1/2 cups + 2 tablespoons.

Steps:

  • For the Apple Cake: 1.Heat the oven to 350°F. Coat a 10-inch fluted tube pan with no-stick cooking spray. 2.Combine the flour, cinnamon, baking soda and salt in a medium bowl. Beat the brown sugar, oil and eggs in a large bowl. Gradually add the flour mixture. Stir in the apples, pecans and vanilla. Pour into the prepared pan, no more than 3/4 full. 3.Bake for 50 to 55 minutes or until a toothpick inserted in the center comes out clean. Cool 15 minutes on a wire rack before removing from the pan. Finish cooling on a wire rack. For the Butter Pecan Glaze: 1.Melt the butter in a small saucepan. Toast the pecans in the butter over medium heat, stirring constantly. Mix in the brown sugar, cream and corn syrup. Bring to a rolling boil. Cook about 2 minutes, stirring constantly. Remove from heat. Blend in orange extract. 2.Cool the glaze until thickened. Drizzle over the cake. Extra glaze may be spooned over individual slices, if desired.

Tips:

  • Choose the right apples: For the best flavor and texture, use a variety of apples, such as Granny Smith, Honeycrisp, or Braeburn. These apples hold their shape well and have a good balance of sweetness and tartness.
  • Peel and core the apples: This is the most time-consuming part of the recipe, but it's important to do it carefully to avoid any bitterness from the skins or cores.
  • Simmer the apples: This is the key step in making apple butter. Simmer the apples over low heat until they are very soft and have broken down into a smooth puree.
  • Season the apple butter: Add sugar, cinnamon, nutmeg, and cloves to taste. You can also add a splash of lemon juice or vanilla extract for extra flavor.
  • Let the apple butter cool: Once the apple butter has simmered, let it cool slightly before transferring it to a jar or container. This will help to prevent the apple butter from becoming too thick and pasty.
  • Store the apple butter: Apple butter can be stored in a cool, dark place for up to 6 months. You can also freeze apple butter for up to a year.

Conclusion:

Fresh apple butter cake is a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create a moist and flavorful cake that is sure to impress your friends and family. So next time you're looking for a sweet and satisfying dessert, give this fresh apple butter cake a try. You won't be disappointed!
