MOM'S HOMEMADE BUNS

Mom's Homemade Buns image

My Mom's Homemade Buns are the perfect dinner roll for any occasion! Incredibly soft and fluffy, use all purpose or whole wheat flour, make a big batch and freeze for later.

Provided by Ashley Fehr

Categories     Bread and Baked Goods

Time 2h30m

Number Of Ingredients 8

1/2 cup warm water ((105-110 degrees F -- warm but not hot))
1 tablespoon instant or active dry yeast ((I use instant, but either works in this recipe))
1 teaspoon granulated sugar
2 cups warm water
1/2 cup melted unsalted butter
1/3 cup granulated sugar
1 tablespoon salt
6-7 cups all purpose or whole wheat flour

Steps:

  • In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
  • Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
  • In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
  • Add the bubbly yeast mixture and stir to combine.
  • Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
  • Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
  • The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
  • Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
  • Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
  • Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
  • Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
  • Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
  • Bake at 350 degrees for 15-20 minutes, until light golden brown.

HOMEMADE BUNS

Homemade Buns image

I attend a mom's group at my church and one Tuesday morning our "craft" was making buns. The experienced bun makers of the previous generation taught all of us young moms the craft of bun making. Now I am proud of my bun making and I am glad that I had a chance to acquire this new skill. (Thank you Mavis!) Prep time does not include rising time. Sometimes I will make a big batch of this recipe and then make breadsticks, hoagie rolls, small buns for kid's lunches, and even a batch of cinnamon rolls but adding cinnamon and sugar and rolling up the dough. All of these can be tucked into the freezer until you need them.

60-MINUTE DINNER ROLLS (YES,FRESH BAKED ROLLS IN ONE HOUR!) RECIPE - (4.3/5)

60-Minute Dinner Rolls (Yes,fresh baked rolls in one hour!) Recipe - (4.3/5) image

Provided by Foodiewife

Number Of Ingredients 8

1/4 cup low-fat milk
1/8 cup sugar
1 teaspoon salt
1-1/2 tablespoons butter
1-1/2 packages (or 3-1/2tsps.) of dry active yeast
3/4 cups warm water (105F - 115F)
2-1/2 to 3 cups all-purpose flour
2 tablespoons butter, melted (optional for brushing onto baked rolls)

Steps:

  • I like to use my oven as an "incubator", which hastens the proofing of the dough. I simply turn my oven to WARM for two minutes, then shut it off. Dissolve the yeast in warm water and the sugar until it foams (5-10 minutes). In the meantime, melt the butter in the microwave, then the milk. Combine and allow to cool to about 110F. (You could use a saucepan, but the microwave is much easier for me-- I use 25 second increments.) Dump the milk and yeast mixture into the mixing bowl. Add about 2-1/2 cups flour, and salt, and mix with the dough hook. (Or, beat by hand). Mix for about a minute. With the mixer still going, add the remaining flour, a bit at a time and mix for another couple of minutes, or until the dough starts to clean the sides of the bowl. (I used 3 cups of flour, total). Knead on low speed for about 2 more minutes, or until dough is smooth and elastic - the dough will still be slightly sticky to the touch. Place dough in a lightly oiled bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel, (or plastic wrap) and let it rise in a warm place, free from draft (or in the incubated oven), for about 20 minutes. Turn the dough onto a lightly floured surface, and gently shape into a square. Divide into 9 or 12 pieces. I shape each roll by pulling them into a more circular shape then grab corners to the center and twist. Place the ball on a lightly floured surface, twist side down and gently grab and roll into a round ball. You can also make 27 or 24 small balls and make "clover leaf rolls". You then place3 mini dough balls into a greased muffin cup. Cover the rolls with the dish towel, and let the dough rise for about 15 minutes. Meanwhile, preheat the oven for 425ºF. Bake for about 12 minutes or until the rolls are golden brown. Remove from pans immediately, and brush with 2 Tablespoons melted butter, immediately. Cool on a wire rack, and you can eat these within just a few minutes. The texture of these rolls are fluffy and this is now my "go to" recipe for bread rolls.

Tips:

  • Choose the Right Ingredients: Opt for high-quality flour, active dry yeast, and fresh milk for the best results.
  • Activate the Yeast Properly: Follow the recipe's instructions for activating the yeast. If the yeast is not activated correctly, the buns will not rise properly.
  • Knead the Dough Thoroughly: Kneading the dough develops the gluten, which gives the buns their structure and texture. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the Dough Rise in a Warm Place: The dough should rise in a warm place until it has doubled in size. This will take about 1-2 hours, depending on the temperature of the room.
  • Shape the Buns: Once the dough has risen, punch it down and divide it into equal pieces. Shape the pieces of dough into buns and place them on a baking sheet.
  • Let the Buns Rise Again: Let the buns rise again for 30 minutes, or until they have doubled in size.
  • Bake the Buns: Preheat the oven to the temperature specified in the recipe. Bake the buns for the amount of time specified in the recipe, or until they are golden brown.
  • Let the Buns Cool: Let the buns cool on a wire rack before serving.

Freshly baked buns are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or dinner. With a variety of recipes to choose from, you can find the perfect bun for any occasion.
