1 (24 ounce) package frozen white and yellow corn
1 (1 ounce) package taco seasoning mix
1/2 cup very finely chopped red onion
1/2-1 very finely chopped jalapeno
2 -3 large tomatoes, chopped
1 bunch cilantro, chopped very fine
2 limes, juice of
2 avocados (optional)

3 large cloves garlic
2 teaspoons bacon chipotle sauce (recommended: Bob's Bacon Chipotle Sauce)

2 scallions, sliced
1/4 cup chopped fresh cilantro
1 teaspoon chili powder, hot if desired, divided
1/4 teaspoon salt
1 tablespoon extra virgin olive oil
