FAVA BEAN SALAD WITH JAMON AND FRESH MINT
In the Catalonia area of Spain, Fava beans are paired with slivered jamon (cured ham) and fresh mint. According to The New Spanish Table, this salad was invented by Catalan chef Josep Mercader and is now copied all over Catalonia. If fresh fava beans are hard to find, shelled edamame may be substituted. Posted for ZWT 5.

Steps:
- 1. In a pot of boiling salted water, cook the shelled fava beans until crisp-tender, 12 to 15 minutes. Drain and rinse under cold running water. Remove the thin outer skin by pinching the beans. The skins usually slip off quite easily. Put the peeled beans in a large bowl. 2. Add all of the remaining ingredients, except the lettuce. Toss to mix. Adjust the seasoning. Add the lettuce and toss again. Divide among 4 serving plates. Serve cold. From "1,000 Mexican Recipes." Copyright 2001 by Marge Poore. Used with permission of the publisher, Wiley Publishing, Inc. Tips:
- Choose fresh, young fava beans for the best flavor and texture. Look for beans that are bright green and plump, with no blemishes or wrinkles.
- To shell fava beans, blanch them in boiling water for 1-2 minutes, then immediately transfer them to an ice bath. This will make the beans easier to peel.
- If you don't have time to blanch the beans, you can also remove the shells by hand. Simply pinch the seam of the bean and pull it open. Be careful not to break the beans.
- To make the dressing, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper. Taste and adjust seasonings as desired.
- For a more flavorful salad, add some crumbled feta cheese, chopped walnuts, or crispy bacon.
Conclusion:
Fresh fava bean salad is a delicious and healthy side dish that can be enjoyed all spring and summer long. With its bright flavors and crunchy texture, this salad is sure to be a hit at your next potluck or barbecue.
