Fresh Fettuccine With Pulled Rotisserie Chicken, Pesto, and Roas image

What better to cook than something so fast and packed with flavor? I got this recipe from Sara Moulton's show. Instead of pulled rotisserie I just fried chicken breast with adobo. I also omitted the olives since they're not my taste. I almost went into a panic when I thought I lost the recipe. That's how much I love it!

Tips:

  • To make the perfect fresh fettuccine, use a pasta maker or a rolling pin to roll out the dough thinly. The thinner the dough, the more delicate the pasta will be.
  • When cooking the fettuccine, be sure to salt the water generously. This will help to flavor the pasta and prevent it from sticking together.
  • If you don't have a rotisserie chicken, you can use leftover cooked chicken or even canned chicken. Just be sure to shred it before using.
  • To make the pesto, use fresh basil leaves for the best flavor. If you don't have fresh basil, you can use dried basil, but be sure to use less, as it is more concentrated.
  • When roasting the red peppers, be sure to toss them with olive oil and salt before roasting. This will help them to caramelize and develop a delicious flavor.

Conclusion:

This fresh fettuccine with pulled rotisserie chicken, pesto, and roasted peppers is a delicious and easy-to-make meal that is perfect for any occasion. The combination of flavors and textures is sure to please everyone at the table. So next time you're looking for a quick and easy dinner idea, give this recipe a try. You won't be disappointed!
