I got this recipe from The Ayurvedic Cookbook. It's a very simple salad. I think this would be good mixed with some coconut (or other flavored) yogurt.

Time 15m

Number Of Ingredients 5

1 fresh ripe, sweet pineapple
1 c sweet raisins
1/4 c (dried) unsweetened coconut, shredded etc.
1 Tbsp fresh mint leaves
1 c coconut yogurt (optional)

Steps:

  • 1. Use a sweet ripe pineapple for this recipe. Peel and core it. Cut into 1" cubes.
  • 2. Mix the rest of the ingredients and if you like add some coconut yogurt to it, I think it really would add here. This can be stored in the fridge for 6-8 hours.
  • 3. Enjoy!

Tips:

  • Choose ripe, juicy pineapples for the best flavor.
  • Cut the pineapple into bite-sized pieces for easy eating.
  • Use a variety of fruits and vegetables to add color and flavor to your salad.
  • Add nuts or seeds for a crunchy texture.
  • Use a light vinaigrette dressing to avoid overpowering the delicate flavors of the fruit.
  • Serve the salad chilled for a refreshing treat.

Conclusion:

Fresh pineapple salad is a delicious and healthy way to enjoy the tropical fruit. With its vibrant colors and refreshing flavors, it's a perfect side dish or light lunch. The versatility of pineapple salad allows for endless variations, so you can customize it to your own taste.
