RASPBERRY LEMON MERINGUE PIE

Raspberry Lemon Meringue Pie image

Added additional lemon and raspberries to this classic and delicious lemon meringue pie, giving it a less-sweet and brighter flavor. Sometimes I don't make the meringue, I just cool the lemon filling for 3 hours and garnish with a dollop of whipped cream and a raspberry at serving time.

Tips:

  • Use fresh raspberries for the best flavor. Frozen raspberries can also be used, but they should be thawed and drained before using.
  • Make sure the egg whites are at room temperature before whipping them. This will help them whip up more easily and create stiffer peaks.
  • Whip the egg whites gradually, starting on low speed and increasing the speed as the whites begin to foam. This will help prevent the whites from becoming over-beaten.
  • Add the sugar to the egg whites slowly, a little at a time. This will help prevent the whites from becoming grainy.
  • Continue whipping the egg whites until they are stiff and glossy. The peaks should hold their shape when you lift the beater out of the bowl.
  • Fold the raspberries into the meringue gently. Be careful not to over-mix, as this can cause the meringue to deflate.
  • Pipe the meringue onto a baking sheet lined with parchment paper. Make sure the meringues are spaced evenly apart, as they will spread slightly during baking.
  • Bake the meringues in a preheated oven at 200°F for 1 hour and 30 minutes, or until they are dry and crisp.
  • Let the meringues cool completely before serving.

Conclusion:

Fresh raspberry meringues are a delicious and easy-to-make treat. They are perfect for any occasion, from a simple afternoon snack to a special dessert for a party. With their light and airy texture and sweet and tangy flavor, these meringues are sure to be a hit with everyone who tries them.
