GREEN PEPPER AND TOMATO SALAD

Green Pepper and Tomato Salad image

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 10

2 green bell peppers, seeded and cut into 1 1/2-inch dice
3 vine-ripe tomatoes, seeded and diced
1 small onion, chopped
1 large clove garlic, finely chopped
1/2 cup flat-leaf parsley leaves, coarsely chopped
1/2 lemon, juiced (1 tablespoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Coarse salt and black pepper
1 teaspoon ground cumin, 1/2 a palm full

Steps:

  • Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

POTATOES, PEPPER AND TOMATO SALAD

Potatoes, Pepper and Tomato Salad image

Provided by Marian Burros

Categories     easy, salads and dressings, side dish

Time 40m

Yield 2 servings

Number Of Ingredients 9

16 ounces tiny new potatotes
8 ounces whole red peppers or 7 ounces ready-cut chopped peppers (1 to 1 1/2 cups)
8 ounces ripe field tomatoes
8 oil-cured black olives
1 tablespoon fresh oregano
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1/8 teaspoon salt, optional
Freshly ground black pepper to taste

Steps:

  • Scrub but do not peel potatoes. Cover with water and cook in a covered pot until potatoes are tender, about 15 to 20 minutes.
  • Wash, trim, seed and cut whole peppers into julienne strips, then cut strips into quarters and place in serving bowl.
  • Wash, trim and dice tomatoes and add to peppers.
  • Pit olives and cut up; add to bowl.
  • Wash, dry and chop oregano and add to bowl.
  • Stir in oil and vinegar.
  • When potatoes are cooked, drain and cut into small dices. Stir into bowl and mix to coat with dressing. Season to taste with pepper.

Tips:

  • Select ripe and flavorful tomatoes. Look for tomatoes that are deep red in color and have no blemishes. Avoid tomatoes that are green or have soft spots.
  • Use fresh, crisp bell peppers. Choose bell peppers that are brightly colored and firm to the touch. Avoid peppers that are wrinkled or have soft spots.
  • Chop the vegetables evenly. This will help them cook evenly and make the salad more visually appealing.
  • Use a sharp knife to cut the vegetables. This will help you get clean, even cuts and prevent the vegetables from tearing.
  • Don't overcook the vegetables. The vegetables should be cooked until they are tender-crisp. Overcooking will make them mushy.
  • Use a light dressing. A light dressing will help to enhance the flavor of the vegetables without overpowering them.
  • Serve the salad immediately. Tomato and pepper salad is best served fresh. If you need to make it ahead of time, store it in the refrigerator for up to 2 hours.

Conclusion:

Tomato and pepper salad is a simple but delicious dish that is perfect for summer. It is made with fresh, ripe tomatoes, crisp bell peppers, and a light dressing. The salad is easy to make and can be tailored to your own taste. For example, you can add other vegetables, such as cucumbers or onions, or you can use a different type of dressing. No matter how you make it, tomato and pepper salad is a refreshing and healthy dish that is sure to please everyone at your table.
