Categories     Salad     Olive     Onion     Tomato     No-Cook     Picnic     Low Carb     Quick & Easy     Feta     Summer     Bon Appétit

Yield Serves 6

Number Of Ingredients 7

5 ripe large tomatoes, cut into 1/3-inch-thick rounds
1 small red onion, thinly sliced
1/4 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
4 ounces feta cheese, crumbled
1/4 cup Kalamata olives or other brine-cured black olives, pitted
1 tablespoon chopped fresh parsley

Steps:

  • Arrange tomatoes on platter. Top with onion slices. Drizzle oil and vinegar over. Sprinkle with salt and pepper. Let stand at room temperature at least 1 hour. Sprinkle cheese, olives and parsley over salad and serve.

Tips:

  • Use ripe, in-season tomatoes for the best flavor.
  • Choose a variety of tomatoes, such as cherry, Roma, and heirloom, for a more complex flavor and texture.
  • Cut the tomatoes into bite-sized pieces so that they are easy to eat.
  • Red onion adds a sharp, pungent flavor to the salad. If you prefer a milder flavor, use a sweet onion instead.
  • Use crumbled feta cheese for a salty, tangy flavor. If you don't like feta, you can substitute another type of cheese, such as mozzarella or goat cheese.
  • Kalamata olives add a briny, salty flavor to the salad. If you don't like Kalamata olives, you can substitute another type of olive, such as black olives or green olives.
  • Use a good quality olive oil for the dressing. This will help to bring out the flavors of the other ingredients.
  • Season the dressing with salt and pepper to taste.
  • Let the salad sit for at least 30 minutes before serving so that the flavors can meld.
  • Serve the salad at room temperature or chilled.
