4 salt-packed anchovy fillets, rinsed, filleted and minced
1 serrano chile, seeded and minced
1/4 cup red wine vinegar
1 tablespoon honey
2 scallions, white and green parts, thinly sliced on the bias
1/2 cup walnut pieces, toasted and coarsely chopped
1/2 cup extra-virgin olive oil
1 pound Brussels sprouts, trimmed and quartered lengthwise

Steps:

  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees.

4 -6 tablespoons extra virgin olive oil
3 -4 garlic cloves, minced
lemon juice, my addition, for garnish (optional)
salt, to taste

  • Remove brown outer leaves of brussel sprouts. Cut the brussel sprouts in half. NOTE: Original recipe left brussel sprouts whole. It's your choice to cut in half or leave whole.
  • In sauce pan, heat olive oil over medium heat. Add the brussel sprouts and fry, stirring occasionally, until very dark brown, almost charred, but NOT burnt.
  • The last minute of cooking, add the garlic and stir in to combine. Be careful not to burn the garlic!

  • In a heavy-bottomed pot, heat 2 inches of oil over medium-high. When oil reaches 360 degrees on a thermometer, carefully add 1/3 of the brussels sprouts. Cook, turning occasionally, until crisp and golden brown, 2 to 3 minutes. Transfer to a paper towel-lined tray with a slotted spoon and sprinkle with salt. 1/2 cup brown sugar

  • Preheat the oven to 300 degrees F. Pour half the contents of each beer can into a shallow roasting pan, then set the cans upright in the pan.
  • In a medium bowl, toss the butter with the Three's BBQ Dry Rub and set aside. Rinse the chickens and pat dry. Generously rub chickens inside and out with the seasoned butter, being sure to stuff some butter under the skin as well. Put one lemon quarter in each cavity and then slide the chickens over the beer cans. Add the orange peels to the pan. Roast for 1 hour.
  • Pull the pan from the oven and generously ladle the Orange-Hoisin Glaze over the chickens. Return to the oven and cook until the glaze has caramelized and turned a dark golden amber, about 25 minutes. When done, the internal temperature of the thigh meat should register 160 degrees F. Let the chickens rest, lightly tented with foil, for about 15 minutes. Carefully cut out the back bone of each chicken and cut the breast down the center.
  • Serve a half-chicken per person, with Wok-Fried Bacon Brussels Sprouts and Horseradish Mashed Potatoes on the side. Strain the pan drippings and ladle over the chicken prior to serving.
  • In a bowl, mix together the chili powder, brown sugar, celery salt, cinnamon, coriander, five-spice powder, oregano, garlic, chile flakes, curry powder, nutmeg, 4 tablespoons kosher salt and 2 tablespoons black pepper. Store in a sealed container.
  • In a medium saucepot over medium-high heat, melt the butter and brown sugar together. Add the orange juice, hoisin, garlic, onions, orange rind and juice, lemon rind and juice, lime rind and juice, lemongrass, jalapeno and ginger. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
  • In a deep saucepot, heat the oil to 350 degrees F. Fry the brussels sprouts until the edges start to turn golden brown, about 2 minutes. Remove with a spider and drain on paper towels.
  • In a medium wok or saute pan over medium-high heat, add the bacon fat and bacon. Then add the ginger, garlic, carrots and fried brussels sprouts; stir-fry for about 3 minutes. Add the balsamic and kimchee and cook, tossing, until everything is evenly glazed. Turn off the heat and add the basil. Divide into 4 portions and garnish with Parmesan.
  • Fill a large pot with 1 gallon of water. Add the potatoes and bring to a boil. Reduce to a rolling simmer (medium-low heat) and cook until the potatoes are fork tender, about 30 minutes.
  • Meanwhile, combine the whipping cream, garlic, rosemary and thyme and in a small saucepan. Bring to a simmer and cook until the cream is infused, about 10 minutes. Strain and keep warm.
  • Drain the potatoes when they are done and return them to the pot over low heat. Using a potato masher, mash in the infused cream, creme fraiche, butter, horseradish, 1 tablespoon salt and 1 teaspoon pepper until just combined.

1/2 cup apple cider vinegar
1/4 cup honey
1/4 cup apple cider
1 cup raw, shelled pumpkin seeds
Neutral oil or nonstick spray, for the baking sheet
1 cup granulated sugar
1 cup water
1/2 teaspoon sea salt
Freshly cracked black pepper
1 pound Brussels sprouts
Neutral oil, for frying
Kosher salt

Steps:

  • Prepare the apple reduction: In a small sauce pot over medium heat, combine shallots, vinegar and honey. Simmer, stirring occasionally, until reduced by half, about 10 minutes. Add apple cider and continue to cook until the mixture is thick and syrupy, another 5 to 10 minutes.
  • Prepare the candied pumpkin seeds: Preheat oven to 350 degrees F.
  • Spread pumpkin seeds out on baking sheet and bake, stirring once, until nicely toasted and golden, about 10 minutes. Set the pumpkin seeds aside. Keep the oven on.
  • Heavily grease another baking sheet with neutral oil or nonstick spray and set aside.

  • Prepare the Brussels sprouts: Trim the stem end of the Brussels sprouts and cut a cross about 1/4 inch deep in the top of the sprouts.
  • Heat the oil in a sauce pot to 315 to 325 degrees F.
  • Working in batches, fry the Brussels until dark golden brown and very crispy, 5 to 8 minutes per batch. Drain Brussels on a paper towel and sprinkle with salt immediately.

A stir-fry is always a great way to use a little bit of leftover meat with a lot of vegetables. This one is quickly accomplished because the turkey is already cooked and it's thrown into the colorful, gingery mix at the last minute. Once you add the turkey it's important to stir-fry only long enough to heat the turkey through or it will be dry and stringy. If you are making this just after Thanksgiving and you happen to have leftover Brussels sprouts too, then you can reduce the cooking time even more, adding them along with the turkey after you've stir-fried the red peppers, and just stir-frying to heat through.

1 tablespoon rice wine or dry sherry
1/4 cup chicken, turkey or vegetable stock
1 tablespoon soy sauce, more to taste
2 tablespoons grapeseed, canola or peanut oil
1 tablespoon minced ginger
2 fat garlic cloves, minced
1/2 teaspoon red pepper flakes
1 1/2 pounds brussels sprouts, trimmed and quartered
1 bunch scallions, cut diagonally in 1/2-inch lengths, dark green parts separated
1 red bell pepper, cut in thin 2-inch strips
1 cup shredded turkey
Salt and pepper, to taste
1/4 cup chopped cilantro
Grains or noodles, for serving

Steps:

  • Combine rice wine or sherry, stock and soy sauce in a small bowl. Place all ingredients within reach of stove.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or 2 when added to the pan. Add oil to pan and swirl it around.
  • Immediately add garlic, ginger and red pepper flakes and stir-fry for no more than 10 seconds. Add brussels sprouts and stir-fry for 2 minutes. Add white and light green parts of scallions and bell pepper and stir-fry for 2 minutes. Add turkey and broth mixture. Sprinkle with salt and pepper to taste and stir-fry for another 30 seconds to a minute.
  • Add cilantro, toss together, and sprinkle with green scallion ends. Remove from heat and serve with grains or noodles.

Fried Green Beans, Scallions and Brussels Sprouts With Buttermilk-Cornmeal Coating image

This buttermilk batter fries up to a fluffy/crispy coating. When I was deciding what vegetables I wanted to coat and fry with this batter I knew that I would use scallions and green beans. (I used green beans with almost all of my recipe tests this week) Then I found a half-pound of brussels sprouts that had seen better days in my crisper. I trimmed off the yellowing outer leaves, quartered them, gave them a dunk in the batter and eased them into the hot oil. Now I will never throw out old brussels sprouts again. Okra would also be a good choice for this recipe. You can serve these plain or with any number of dips, either spicy (think Sriracha or chipotle aioli) or Japanese.

1/2 cup cornstarch
2 tablespoons fine polenta or cornmeal
1/2 teaspoon salt, plus additional for sprinkling
1/2 teaspoon baking powder
1 cup less 2 tablespoons buttermilk or yogurt thinned with milk
3 tablespoons cold sparkling water
1/2 pound green beans
1/2 pound brussels sprouts
2 bunches scallions
Canola or grapeseed oil for frying

Steps:

  • Combine cornstarch, polenta or cornmeal, salt and baking powder in a bowl and whisk together. Add buttermilk and sparkling water and whisk together until mixture is blended and has the consistency of thick cream.
  • Top and tail beans. Trim brussels sprouts and quarter. Trim root end off the scallions and cut away dark green ends.
  • Pour oil into a wok or wide saucepan to a depth of 3 inches and heat over medium-high heat to 360 to 375 degrees. Set up a sheet pan with a rack on it next to the pan. Cover rack with a few layers of paper towels. Have a spider or deep fry skimmer handy for removing vegetables from the oil.
  • Using tongs, dip vegetables into batter a few at a time, making sure to coat thoroughly. Transfer to hot oil and fry until golden brown, which should not take more than a couple of minutes. Flip over halfway through with the spider to make sure the coating is evenly fried. It is important not to crowd pan and to let oil come back up to temperature between batches.
  • Using the spider, remove vegetables from oil, allowing excess oil to drip back into pan, and drain on towel-covered rack. Sprinkle with salt right away if desired. Allow to cool slightly and serve.

  • Heat olive oil in a cast-iron skillet over medium heat until the oil shimmers, and cook garlic, stirring often, until golden brown and fragrant, about 3 minutes. Stir in onion and cook until soft, stirring often, about 5 minutes. 2 lb brussels sprouts
1 medium sweet onion
4 slice bacon, thick cut
3 clove garlic, minced
1 c buttermilk
1 egg
1 c all purpose flour
1 Tbsp creole seasoning
c vegetable oil for frying

Steps:

  • 1. Wash Brussels sprouts, trim bottoms, and separate leaves.
  • 2. Cut 4 slices of bacon into 1-inch pieces. Fry in a nonstick pan or cast iron skillet over medium heat until crispy.
  • 3. Add Brussels Sprout leaves and garlic and saute until tender. Salt & pepper to taste.
  • 4. Mix together all-purpose flour and Creole seasoning in a small mixing bowl. Whisk together buttermilk and one egg.
  • 5. Cut onion into thin slices. Dip in buttermilk & egg mixture and dredge into season flour. Deep fry or pan fry at least 1 cup of vegetable oil until crispy
  • 6. Place cooked Brussels sprouts and bacon on serving platter and top with French Fried Onions.

12 ounces Brussels sprouts
1 tablespoon olive oil
1 garlic clove, minced
1 sprig sweet basil, chopped
1 pinch salt
1 pinch pepper, to taste
1 tablespoon lemon juice (optional)

Steps:

  • Check brussels sprouts for old, tough outer leaves and remove. Slice them in half, especially if they are larger than golf balls.
  • Heat the olive oil in a large skillet on medium to medium high heat. Add the sprouts.
  • Fry the sprouts, making sure both sides are browned. Sear them so they are quite dark, then reduce the heat and continue to cook about 5 minutes, shaking the pan periodically.
  • Add the garlic and when the pan has cooled to medium low heat. Then add the basil, salt and pepper.
  • Spill a little water in the pan, enough to make a steam, and cover with a lid for the last three minutes to be sure the sprouts are tender.
  • Put in a serving dish and sprinkle with a little lemon juice if desired.
