4 large free range eggs
4 slices of bread
4 slices of cheese (I used strong cheddar and red Leicester cheeses)
Soft butter for spreading and frying
salt and black pepper to taste

Steps:

  • Melt a bit of butter in a large skillet. Once it begins to foam add the eggs, taking care not to break the yolks. Cook according to your preference, flipping them over once. We like the yolks runny and the edges crispy. Season with salt and black pepper and remove to a plate.
  • Wipe out the skillet. Butter your slices of bread with the softened butter on one side of each slice. Place two slices into the skillet buttered slice down. Top with one slice of cheese, and then the two eggs. Place the other slice of cheese on top and then the final slice of bread, buttered side up.
  • Cook until golden brown on the bottom of the sandwiches. Carefully turn them over and brown them on the other sides.
  • Serve hot and cut on the diagonal.

1 tablespoon butter
1 tablespoon mayonnaise

Steps:

  • Heat the butter in a medium-sized non-stick frying pan over medium high heat.
  • When it's very hot, crack one egg on one side of the pan and one egg on the other side of the pan.
  • Try to keep them from running into each other so that they can be flipped individually.

4 slices multigrain bread, diced
1 teaspoon garlic, minced
1/4 cup olive oil, plus
1 tablespoon olive oil
4 eggs
1/2 cup salsa

Steps:

  • Place the diced bread and the garlic in a large bowl and mix together.
  • Add 1/4 olive oil and stir the ingredients together.
  • Place a large nonstick skillet over medium heat and add the bread and garlic mixture.
  • Cook until it begins to sizzle and brown.
  • Add the tablespoon of olive oil to the pan (around the bread) and heat for 10 seconds.
