CRISPY POTATO CAKE

Crispy Potato Cake image

When grated and fried into a potato cake, super cheap potatoes take on an impressive and fancy look that every budget-minded cook can appreciate. A crispy, browned potato cake (often called a roesti potato cake) makes an excellent side dish to meat loaf or any saucy dish, and I especially love it paired with fried or poached eggs and a little salsa. Eggs and potatoes for dinner costs so little to make and tastes so comforting and indulgent at the end of a busy day.

FRIED POTATOES WITH OREGANO AND PARMESAN

Fried Potatoes with Oregano and Parmesan image

Categories     Potato     Side     Fry     Vegetarian     Kid-Friendly     Quick & Easy     Graduation     Parmesan     Potluck     Oregano     Gourmet     Sugar Conscious     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher     Small Plates

Yield Makes 4 servings

Number Of Ingredients 7

1/4 cup extra-virgin olive oil
1 1/2 lb Yukon Gold potatoes (about 5), peeled and halved lengthwise, then cut crosswise into 1/4-inch-thick slices
1 large onion, halved lengthwise, then sliced lengthwise (1/4 inch thick)
3/4 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons finely grated Parmigiano-Reggiano

Steps:

  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then add potatoes, onion, oregano, salt, and pepper and reduce heat to moderate. Cook, covered, stirring and turning potatoes over occasionally, until almost tender, about 10 minutes. Remove lid and cook, stirring and turning potatoes over 3 or 4 times, until browned and crusty, 8 to 10 minutes more. Add salt and pepper to taste, then transfer to a shallow bowl and sprinkle with cheese.

Tips:

  • Use starchy potatoes: Varieties like Russet, Idaho, or Yukon Gold are ideal for frying as they hold their shape well and become crispy on the outside.
  • Grate the potatoes evenly: Consistent-sized shreds ensure even cooking. Use a box grater with a large-holed side.
  • Soak the potatoes in water: This removes excess starch, preventing the potatoes from sticking together during frying.
  • Dry the potatoes thoroughly: Before frying, pat the potatoes dry with a clean kitchen towel or paper towels. This helps achieve a crispy texture.
  • Use a large skillet: A spacious skillet allows the potatoes to spread out in a single layer, promoting even browning.
  • Maintain proper oil temperature: The ideal temperature for frying is between 350°F (175°C) and 375°F (190°C). Use a kitchen thermometer to ensure accuracy.
  • Don't overcrowd the pan: Frying the potatoes in batches prevents overcrowding and ensures they cook evenly.
  • Season the potatoes: Sprinkle salt, pepper, and other desired seasonings over the potatoes before frying for added flavor.
  • Flip the potatoes occasionally: Use a spatula to gently flip the potatoes during frying to ensure they brown evenly on all sides.
  • Drain the potatoes on paper towels: After frying, transfer the potatoes to a plate lined with paper towels to absorb excess oil.

Conclusion:

With these tips in mind, you can create perfectly crispy and delicious fried grated potatoes at home. Experiment with different seasonings and herbs to create unique flavor variations. Serve them as a side dish, a main course with eggs or meat, or as a topping for salads and bowls. Enjoy this versatile and satisfying dish that is sure to become a family favorite.
