Time 30m

Yield 4 servings

Number Of Ingredients 19

Oil
4 green tomatoes, cut into 1/4-inch rings
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1 tablespoon garlic powder
4 eggs
2 tablespoons milk
1 1/2 cups panko bread crumbs
Pinch cayenne pepper
Pinch paprika
Buttermilk Dipping Sauce, recipe follows
1 cup apple cider
1 tablespoon brown sugar
3/4 cup buttermilk
3/4 cup mayonnaise
2 tablespoons Neelys BBQ sauce
1 lime, juiced
4 scallions, sliced thin
Kosher salt and freshly ground black pepper

Steps:

  • In a deep-fryer, preheat oil to 350 degrees F.
  • Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. Add only a few pieces to the fryer at a time, so they can cook evenly, about 2 to 3 minutes. Drain on paper towels and serve with Buttermilk Dipping Sauce:
  • In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 14

2 quarts vegetable oil, for frying
1 1/2 cups all-purpose flour
1 teaspoon kosher salt, plus more for sprinkling
1/2 teaspoon freshly cracked black pepper
1/2 cup buttermilk
4 large eggs
2 cups yellow cornmeal
1 cup panko breadcrumbs
4 green tomatoes (about 1 pound), sliced 1/4 inch thick
1 cup mayonnaise
1/4 cup hot vinegar peppers, drained and finely chopped, plus 2 tablespoons hot vinegar pepper juice
2 teaspoons sweet paprika
1 teaspoon granulated sugar
1/2 teaspoon kosher salt

Steps:

  • For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
  • Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
  • Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. Using your first hand, coat the tomato slices in the breadcrumb mixture evenly on both sides.
  • Working in batches, carefully place the breaded tomatoes into the hot oil. Fry until golden brown and crispy, about 30 seconds per side. Transfer to the cooling rack and sprinkle each slice generously with more salt.
  • For the dipping sauce: Put the mayonnaise in a bowl, add the hot peppers and pepper juice, paprika, sugar and salt and stir to combine. Serve the fried tomatoes immediately with the dipping sauce on the side.

You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

Provided by CHEF GRPA

Categories     Vegetable

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

4 large green tomatoes or 4 large tomatoes
2 eggs
1/2 cup milk
1/2 cup all-purpose flour
1/2 cup cornmeal
1/2 cup breadcrumbs
2 teaspoons coarse kosher salt
1/4 teaspoon ground black pepper
1 quart vegetable oil (for frying)

Steps:

  • 1. Slice tomatoes about 3/8 to1/2 inch thick. Discard the ends.
  • 2. Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
  • 3. In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.
  • Note: They couldn't have been any better. The batter stuck perfectly, and held up really well. This was my first time making these myself, and I had NO problem whatsoever no problems at all. For all you "first time fryers" my late sister gave me this tip: to tell when the oil is hot enough, dip a wooden spoon into the oil and look to see if bubbles form around it. If bubbles form, your oil is ready to fry inches.
  • I've had these tomatoes in various southern restaurants. This recipe was great in flavor, but I wasn't crazy about the texture. After the first batch, I made some changes and found them to be exactly what I was looking for. The flour made the breading too soft. I reduced the flour by 1/2 cup, which made equal parts flour, cornmeal, and breadcrumbs. This gave the tomatoes the crispness that they needed. Again, the flavor was great! I received many compliments and will continue to use this recipe.

Provided by Taste of Home

Categories     Appetizers

Time 20m

Yield 6-8 servings.

Number Of Ingredients 5

4 medium green tomatoes
1 teaspoon salt
1/4 teaspoon lemon-pepper seasoning
3/4 cup cornmeal
1/2 cup vegetable oil

Steps:

  • Slice tomatoes 1/4 in. thick. Sprinkle both sides with salt and lemon-pepper. Let stand for 20-25 minutes. Coat with cornmeal. In a large skillet, heat oil over medium heat. Fry tomatoes for 3-4 minutes on each side or until tender and golden brown. Drain on paper towels. Serve immediately.

Nutrition Facts :

Tips:

  • Choose firm, unripe green tomatoes for frying. This will help them hold their shape and prevent them from becoming mushy.
  • Slice the tomatoes about 1/2-inch thick. This will ensure that they cook evenly.
  • Season the tomato slices with salt and pepper, or your favorite spices, before dredging them in the breading.
  • Use a light hand when dredging the tomato slices in the breading. This will help to prevent the breading from becoming too thick and heavy.
  • Fry the tomato slices in hot oil until they are golden brown and crispy. Be careful not to overcrowd the pan, or the tomatoes will not cook evenly.
  • Serve the fried green tomatoes hot with your favorite dipping sauce.

They are a great way to use up unripe green tomatoes, and they can be made with a variety of different ingredients.
