Steps:
- Crush cornflakes in a bag using a rolling pin until crumbs form.
- Melt butter and add cornflakes, coconut, sugar, corn syrup, and cinnamon.
- Roll ice cream into 3 inch balls. To roll the ice cream into balls, only thaw the ice cream slightly so you can easily roll it with your hands. You could even wear plastic gloves to make rolling the balls easier. Then roll the ball in the cornflake mixture. You may need to pack the mixture firmly around the ice cream ball.
- Place the covered ball onto a cookie sheet lined with waxed paper.
- Freeze until firm, about 4 hours.
- When ready to serve, top with whipped cream, hot fudge and caramel.
NOT FRIED, FRIED ICE CREAM
Can't remember where I found this recipe, but it's great for Mexican night, or Cinco De Mayo!! (New Note: If you use the new Special K cereal with cinnamon and pecans, this is REAL delicious! Add the sugar and not as much cinnamon, no butter, and you don't have to bake it! Very crunchy and SO DELICIOUS!!! I used about 1 1/4 C Special K.)

Tips:
- Use high-quality vanilla ice cream for the best results. You can also use other flavors of ice cream, such as chocolate or strawberry.
- Make sure the ice cream is very cold before you start frying it. This will help it hold its shape and prevent it from melting too quickly.
- Use a large, heavy-bottomed skillet for frying the ice cream. This will help distribute the heat evenly and prevent the ice cream from burning.
- Heat the oil to the correct temperature before adding the ice cream. The oil should be hot enough to sizzle when you add the ice cream, but not so hot that it burns the ice cream.
- Fry the ice cream in batches, working in small batches so that the ice cream doesn't overcrowd the skillet and doesn't melt too quickly.
- Fry the ice cream balls for just a few seconds per side, or until they are golden brown. Don't overcook the ice cream, or it will melt.
- Serve the fried ice cream immediately, topped with your favorite toppings such as chocolate sauce, whipped cream, or chopped nuts.
Conclusion:
Fried ice cream is a delicious and unique dessert that is perfect for any occasion. It is easy to make and can be customized to your own taste. With a little practice, you can make perfect fried ice cream that will impress your friends and family.
