Categories     Rice Sides

Number Of Ingredients 7

1 Tbsp butter
1 c long grain rice, uncooked
1 medium chopped onion
1 can(s) chicken gumbo soup
1.5 c boiling water
2 chicken bouillon cubes
1/2 c egg substitute

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In medium skillet over medium heat, melt butter.
  • 3. Add rice and stir to coat; cook and stir until rice is golden brown, about 6 minutes.
  • 4. Put browned rice into 3-quart casserole with lid.
  • 5. In same skillet, add chopped onions and saute until transparent; add to rice.
  • 6. Pour soup over rice mixture.
  • 7. Pour boiling water into bowl, add bouillon cubes and stir to dissolve.
  • 8. Pour over rice mixture.
  • 9. In small skillet, scramble egg substitute until dry and cut into small pieces; sprinkle on top of rice mixture.
  • 10. Cover casserole and bake for 1 hour.

Tips:

  • Choose the right rice: Day-old rice works best as it has less moisture and won't make the casserole mushy. If using fresh rice, cook it and let it cool completely before assembling the casserole.
  • Use a variety of vegetables: Frozen or fresh vegetables are great for adding color, texture, and nutrients to the casserole. Some popular choices include broccoli, carrots, peas, corn, and bell peppers.
  • Don't skimp on the seasonings: Use a generous amount of seasonings like soy sauce, garlic powder, onion powder, and black pepper to give the casserole flavor. You can also add other spices like chili powder, cumin, or smoked paprika for a different flavor profile.
  • Add protein: For a more filling casserole, add cooked chicken, shrimp, beef, or tofu. This will make it a complete meal in one dish.
  • Top it off: Before baking, sprinkle some grated cheese, crushed crackers, or chopped nuts on top of the casserole for a golden-brown crust.

Conclusion:

Fried rice casserole is a versatile and delicious dish that can be enjoyed by people of all ages. With its endless variations, you can easily customize it to your own taste preferences. So next time you're looking for a quick and easy meal, give this fried rice casserole a try. You won't be disappointed!
