- Dissolve gelatin in boiling water, let cool until syrupy.
- Stir in remaining ingredients.

- Beat together cream cheese, mayonnaise and lemon juice; frost salad.

SHREDDED TEX-MEX SALAD WITH CREAMY LIME DRESSING

- Preheat oven to 400 degrees F. Grease an 8 by 8-inch glass pan with butter. Stir together the cornbread mix with the egg and milk. Evenly spread into prepared pan and bake on the middle rack for 20 minutes. Remove from oven and cool in pan for 10 minutes. Remove from pan to cool completely. Mix together the beans with the sazon and season with salt and pepper. Toss the salsa with the tomatoes. When ready to serve, cut the cornbread into 1/2-inch croutons. Toss the lettuce with 3/4 cups of the dressing. In a clear trifle dish, layer the Tex-Mex Salad beginning with the black beans followed by the Monterey Jack cheese, the tomato salsa mixture, the Cheddar, the dressed romaine and top with the cornbread croutons. Serve the remaining dressing on the side.
- Blend all the ingredients except the olive oil until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season, to taste, with salt and pepper.

- Put gelatins in a bowl and add boiling water, stirring until dissolved. In a separate container, whisk together mayonnaise and milk until smooth. Pour into gelatin. Fill a larger bowl half-full with ice and put the bowl with gelatin on top of the ice. Push down on smaller bowl until the sides are surrounded by ice. Can place in refrigerator until thickened. Stir occasionally to check thickness. When mixture is half-set, add cottage cheese, pecans, and pineapple. Pour into large mold like a Bundt pan. Let set in refrigerator overnight.
LIME SALAD
My mom used to serve this every Christmas on a bed of lettuce, crispy iceberg, and surrounded with green and red grapes. Pecans can be substituted for walnuts.

- Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like.
