2 tablespoons unsalted butter, melted, plus more for pan
4 ounces cream cheese
1 1/4 cups confectioners' sugar
1 cup heavy cream
1 cup heavy cream
1/2 cup peanut butter
3 to 4 bananas
1/2 cup chopped roasted peanuts

Steps:

  • Make the crust: Preheat oven to 350 degrees. In a food processor, process cookies until crumbs form. Add butter; pulse until mixture holds together when squeezed. Prepare crust as directed below. Bake until crust is firm and dry to the touch, 15 to 20 minutes. Cool to room temperature.
  • Make the filling: In a clean food processor, process cream cheese, sugar, heavy cream, peanut butter, and salt until smooth and light, scraping sides of bowl as needed.
  • Peel bananas; halve lengthwise. Spread half the cream-cheese mixture over crust; top with a snug layer of bananas. Cover with remaining cream-cheese mixture, smoothing top. Sprinkle with peanuts; cover with plastic wrap. Freeze until firm, at least 6 hours.
  • To remove, wipe outsides of pan with a hot towel; run a knife around inside edge (between paper and pan). Gently pull on paper to lift out of pan. Cut into 12 rectangles.

1/2 cup strawberry jam
2 cups peanut butter-flavored hardening ice cream sauce, such as Magic Shell
1/4 cup granola, for garnish
1/4 cup chopped salted peanuts, for topping
1/4 cup multi-colored sprinkles, for topping
1/4 cup chocolate sprinkles, for topping

Steps:

  • Line a plate or baking sheet with nonstick aluminum foil. Push an ice pop stick in the center of each piece of banana, but not all the way through to the end. Stir the jam to loosen, then brush it all over each banana. Place the bananas on the lined plate and freeze until solid, about 2 hours.
  • Line another plate with nonstick aluminum foil. Pour the ice cream sauce in a coffee mug or small bowl. Remove the bananas from the freezer and quickly dip each in the ice cream sauce to completely coat. Before the shell forms, place the banana on the newly prepared plate and sprinkle each with one of the toppings. Freeze until solid, 5 to 10 minutes.

  • Preheat oven to 350°F and line the bottom of an 8 x 8 inch glass dish with parchment paper. (We also used our fingers to grease the sides of the dish with coconut oil.)

7 ounces chocolate wafers (about 32 wafers)
1 cup confectioners' sugar
1/8 teaspoon salt

3 ripe but firm bananas, trimmed and cut into 1/2-inch slices
1 cup semisweet chocolate chips
1/2 cup roasted lightly salted peanuts, chopped

Steps:

  • 1. Butter an 8-inch square baking pan with nonstick cooking spray, then line with parchment paper, with overhang on all sides. 2. Process the wafers in a food processor until fine crumbs form. (You should have 1 1/2 cups crumbs.) Add the confectioners' sugar and salt and pulse until well mixed.
