Super Easy Fruit Cocktail Cobbler Cake image

This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

2 (15 ounce) cans fruit cocktail (I use Del Monte Carb Clever to cut down on some of the sugar)
1 (18 ounce) box yellow cake mix
1/2 cup unsalted butter, melted

Steps:

  • Pre-heat oven to 350 degrees.
  • Melt one stick of butter in a microwave safe dish for 1 minute 40 seconds on 50% power.
  • Pour entire contents of fruit cocktail cans (juice and all) into a 8 X 11 glass pan that has been sprayed with cooking spray. Spread fruit cocktail evenly on bottom of pan.
  • Sprinkle box of yellow cake mix, evenly, over top of fruit cocktail. Do NOT mix cake mix and fruit cocktail. Use the back of a spoon to smooth out cake mix.
  • Drizzle melted butter over top of cake mix. (Cake mix does not need to be completely covered in butter).
  • (Optional - sprinkle a small amount coconut on top of the cake before baking, photo shows it with coconut).
  • Bake on 350 degrees for 45 minutes.

This recipe is from my Better homes and Gardens Cookbook copyrighted in 1970. It is a very easy last minute desert to make and is wonderful for fruit lovers.

3 1/2 c caned fruit cocktail
1/4 c brown sugar
2 Tbsp cornstarch
1 tsp grated orange peel
3/4 c diced orange sections
2 Tbsp butter or maragrine
1 c biscuit mix
1/3 c light cream
1 Tbsp melted butter or maragrine

Steps:

  • 1. Drain fruit cocktail, reserving syrup, Mix brown sugar and cornstarch, add reserved syrup.Cook and stir until thick. Add fruit cocktail,orange peel and orange sections. Heat just to boiling.Pour into 8x8x2 inch baking dish. Dot with 2 tablespoon butter.Combine biscuit mix, cream and 1 tablespoon butter, mix just to moistened. Quickly drop by spoonfuls onto hot fruit.
  • 2. Bake in hot oven 400 degrees 0 minutes or till biscuits are done. Serve warm with cream.

1/3 cup firmly packed brown sugar
3 tablespoons cornstarch
3 1/2 cups fruit cocktail (1-lb 14-oz can)
1 1/2 teaspoons grated orange peel
3/4 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1 egg
1/4 cup hot water
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup All-Bran® Original or Bran Buds®

Steps:

  • 1. In 2 quart saucepan, combine brown sugar and cornstarch. Stir in fruit cocktail. Cook over medium heat, stirring constantly, until mixture boils and is thickened and clear. Stir in orange peel. Spread evenly in ungreased 9 x 9 x 2-inch baking pan. Set aside.2. Stir together flour, baking powder and salt. Set aside.3. In medium mixing bowl, beat egg until thick and lemon-colored. Add hot water gradually, beating constantly. Add granulated sugar gradually, while beating. Fold in vanilla, KELLOGG'S ALL-BRAN cereal and flour mixture. Spread over fruit cocktail mixture..4. Bake at 375°F about 45 minutes or until crust is lightly browned. Serve warm with whipped topping or ice cream, if desired.
