1 (17.5 oz.) pkg. Pillsbury® Sugar Cookie Mix
2 tbsps. Pillsbury BEST® All Purpose Flour
1/2 cup butter, softened*
1 large egg
1 tsp. vanilla extract
2 egg whites, beaten until foamy
1 1/2 cups finely chopped pecans
3/4 cup Smucker's® Orchard's Finest® Pacific Mountain Strawberry Preserves, or any flavor Orchard's Finest Preserves

Steps:

  • HEAT oven to 350 degrees F. Line cookie sheets with parchment paper, if desired.
  • COMBINE cookie mix, flour, softened butter, egg and vanilla in medium bowl. Mix with spoon until soft dough is formed.
  • USE level measuring teaspoon of dough to make 3/4-inch balls. Dip into egg whites, then roll in pecans. Place on prepared cookie sheet. Make a rounded indentation in the center of each cookie.
  • BAKE 10 minutes. Remake rounded indentation in cookie. Fill with 1/2 teaspoon preserves. Bake an additional 2 minutes or until lightly browned. Cool on cookie sheet 5 minutes. Transfer to wire rack. Cool completely.
  • * To soften butter: Heat unwrapped butter in microwave 10 to 15 seconds.

1-1/2 cups chopped dates
1 cup water
1/2 cup sugar
2 teaspoons orange juice
2 teaspoons grated orange zest
1 cup maraschino cherries, chopped
1/2 cup sweetened shredded coconut
1/2 cup ground nuts
DOUGH:
1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
3 large eggs, room temperature
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Confectioners' sugar, optional

Steps:

  • In a small saucepan, combine the first 5 ingredients; bring to a boil, stirring constantly. Reduce heat; cook and stir for 8 minutes or until thickened. Cool completely. Stir in the cherries, coconut and nuts; set aside., In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and extracts. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well., Using a cookie press fitted with a bar disk, press a 12-in.-long strip of dough onto an ungreased baking sheet. Spread fruit filling over dough. Press another strip over filling. Cut into 1-in. pieces (there is no need to separate the pieces). Repeat with remaining dough and filling., Bake at 375° for 12-15 minutes or until edges are golden. Recut into pieces if necessary. Remove to wire racks to cool. Dust with confectioners' sugar if desired.

This recipe came from a magazine page in Good Housekeeping, and I remember making them in the early '80's with my mom, so this recipe is at least that old. I've made this with several different Jell-o flavors and they've all been good. If you have trouble handling the dough in the cookie press chill it a bit.

4 cups sifted all-purpose flour
1 teaspoon double-acting baking powder
1 1/2 cups butter
1 cup sugar
1 (3 ounce) package jell-o gelatin, any flavor
1 egg
1 teaspoon vanilla
additional Jello gelatin, to sprinkle with (or other cookie decorations)

Steps:

  • Sift flour with baking powder.
  • Cream butter.
  • Gradually add sugar and gelatin, cream well after each addition.
  • Add egg and vanilla; beat well.
  • Gradually add flour mixture, mixing after each addition until smooth.
  • Use cookie press to process dough, droping onto ungreased baking sheets.
  • Sprinkle with Jell-o or decorate as desired.
  • Bake at 400 degrees, about 13 or 14 minutes, or until golden brown at edges.
