BREAD MACHINE FRUIT LOAF

This came from my bread machine recipe book. I have made it a number of times and it comes out lovely. Fantastic as a breakfast toasted and buttered! Yum! I have altered the recipe slightly so that it is compatible with all of you. An Australian tablespoon = 4 tsp (20ml), so I have converted all measurements to teaspoons to avoid confusion. If you have a sweet bread cycle I'd recommend using that, but otherwise I'm pretty sure ordinary would work fine. I have frozen slices in plastic bags, so I always have some on hand if I get a craving. Nutella makes a good spread for this.

Number Of Ingredients 12

270 ml water
6 teaspoons butter or 6 teaspoons oil
1 1/2 teaspoons salt
6 teaspoons brown sugar
450 g white bread flour (3 cups)
6 teaspoons powdered milk
3 teaspoons ground mixed spice
2 teaspoons yeast
1/2 cup mixed dried fruit (I use sultanas and raisins, but you could use commercial mixed fruit or currants)
3 tablespoons water (optional)
6 teaspoons sugar (optional)
3 teaspoons gelatin (optional)

Steps:

  • Put all of the ingredients except the fruit in the order recommended by your manufacturer.
  • If you have a nuts dispenser place the fruit in there.
  • Otherwise add the fruit when the 2nd knead has 8 minutes to go.
  • If using the glaze, combine glaze ingredients in a small saucepan over a heat until the sugar and gelatine has dissolved.
  • Use the pause function if you have one, at fifteen minutes into the baking cycle, brush glaze over loaf.

½ cup margarine
1 cup white sugar
2 eggs
1 cup milk
1 teaspoon vanilla extract
½ teaspoon almond extract
2 ⅛ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup candied mixed fruit
¾ cup raisins
½ cup chopped almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Cream butter and sugar together. Beat in eggs one at a time. Beat smooth. Stir in milk, vanilla, and almond flavoring.
  • In large bowl combine flour, baking powder, and salt. Stir in fruit, raisins, and nuts. Add all at once to first bowl. Stir only to moisten. Turn into greased 9x5x3 inch loaf pan.
  • Bake for 1 hour in 350 degree F (175 degree C) oven until it tests done. Let stand 10 minutes. Remove from pan. Cool and wrap.

10 ounces lean ground beef
1/2 cup breadcrumbs made from whole wheat bread
1/4 cup chopped mixed dried fruits or chopped dried apricots
1 large egg
3 tablespoons chopped shallots
2 tablespoons Dijon mustard
1 teaspoon crumbled dried sage leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons apricot preserves

Steps:

  • Preheat oven to 425°F. Combine beef, breadcrumbs, chopped fruits, egg, shallots, 1 tablespoon mustard, sage, salt and pepper in large bowl; mix thoroughly. Shape mixture into 2 oval loaves, each about 1 inch thick, and place on small rimmed baking sheet.
  • Bake loaves 10 minutes. Mix preserves and remaining 1 tablespoon mustard in small bowl. Brush preserves mixture generously over loaves. Continue to bake until loaves are cooked through and thermometer inserted into center registers 160°F, about 8 minutes.

I found this gorgeous recipe in Ruth Isabel Ross' "Irish Baking Book", which I had originally given to my mum as a birthday present when spending a year abroad in Ireland. It is easy to make and just tastes so fruity. =)

175 g flour
2 teaspoons baking powder
50 g sugar
100 g sultanas or 100 g raisins
1 egg
2 bananas

Steps:

  • Pre heat the oven to 180°C and line a small baking tin with baking paper.
  • Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
  • Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).

2/3 cup nonfat dry milk powder
