1 (15 ounce) can mandarin orange sections, drained
¼ cup sweetened dried cranberries (such as Craisins®)

½ cup vegetable oil
¼ cup honey
¼ teaspoon garlic powder
¼ cup toasted sesame seeds

Steps:

1 (12 ounce) package romaine lettuce, cleaned and torn
1 (7 ounce) package baby spinach leaves, cleaned
3/4 cup fresh strawberries, sliced (or whole raspberries)
1/2 cup fresh pineapple
1/2 cup mandarin orange
1/4 green onion, sliced
1 cup raw almonds
1/3 cup sugar

Steps:

  • Salad & Fruit: Layer salad ingredients onto salad plates, top with cooled Glazed Almonds and serve optionally with Best Raspberry Dressing (Vinaigrette).
  • Glazed Almonds: Heat a heavy skillet on high heat, add almonds and sprinkle generously with sugar, stirring until sugar melts.
  • Caution: The molten sugar is very HOT. Transfer nuts to cool completely on a plate.
  • Break up into pieces.

This is my own creation after buying some white Stilton with blueberries on impulse and having no idea what to do with it! We've also tried this with white Stilton with mangoes, apricots or cranberries, all wonderful! This is more of an idea than a recipe, so feel free to substitute nuts, fruits and dressing to taste. I've also used strawberries and almonds with this. *Note: White Stilton is different from regular Stilton, it is not a blue cheese at all because it has not gone through the process that causes the blue veining that gives blue cheese its distinctive taste. I would describe it as kind of like feta but a little sweeter, especially with the addition of the fruit.
