1 store bought rotisserie chicken, skin discarded, meat removed from bone and diced
1 head Romaine lettuce, washed and leaves torn into bite-size pieces
1 cup cashews, toasted
2 stalks celery, finely-chopped
4 green onion(s), chopped
½ cup green seedless grapes, halved
½ cup red seedless grapes, halved
1 cup mandarin orange segments
or
1 cup orange segments
or
1 cup clementine segments
1 cup strawberries, hulled and sliced
1 ½ cup light mayonnaise
1 clove garlic, minced
2 tbsp lemon juice
¼ tsp white pepper
1 tsp curry powder
¼ cup parsley, fresh, chopped

Steps:

  • Combine chicken, lettuce, cashews, celery, green onion, grapes, orange segments and strawberries in large salad bowl.
  • In smaller glass bowl, combine mayonnaise, garlic, lemon juice, pepper, curry powder and parsley and mix together well with a fork or whisk to make dressing.

1 cup celery, finely chopped

1 cup dry chow mein noodles

I made this and took it to a party last weekend and is it ever knock your socks off good! To make it I chopped the lettuce up and put into one bowl and mixed the fruit and put into another bowl and refrigerated until time to serve. Just mix it all together and add the dressing and stand back! There weren't any leftovers. I'm just guessing on the servings because I didn't count. LOL! It makes a ton though!
