⅓ cup vanilla flavored syrup
1 sponge cake
1 cup blueberries
1 cup sliced strawberries
1 (12 ounce) container frozen whipped topping, thawed

Steps:

butter or oil, for greasing
50g plain flour
3 tbsp cornflour
1 tsp baking powder
4 eggs , separated
175g caster sugar
295g can mandarin segment , drained
200g tub low-fat fromage frais
icing sugar , for dusting

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Grease then line the base and sides of 2 x 20cm sandwich tins with greaseproof paper. Sieve the flours and baking powder together.
  • Use electric hand beaters to whisk the egg whites until stiff, then briefly whisk in the sugar. Beat the egg yolks quickly, then whisk into the whites. Fold in the dry ingredients using a large metal spoon, then spoon the mixture into the tins and level the tops. Bake for 18-20 mins until risen, light golden and a skewer inserted into the middle comes out clean. Cool in the tins for 10 mins, then gently remove and leave to cool completely.
  • Mix the mandarins and fromage frais together. Peel away the greaseproof paper, sandwich the cakes with the mandarin mix, then dust with the icing sugar to serve. Best eaten on the day it's made.

1-1/4 cups sugar
1-1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 cup water
1-1/2 cups cold milk
1/2 teaspoon vanilla extract
1 package (3.4 ounces) instant vanilla pudding mix
2 cups whipped topping
3 tablespoons lemon gelatin
1/2 cup boiling water
10 to 12 ribbons with small charms attached
Assorted fresh fruit

Steps:

  • In a large bowl, beat eggs until light and fluffy. Gradually beat in sugar until light and lemon-colored. Combine flour and baking powder; add to egg mixture alternately with water, beating just until smooth. Pour into a greased and floured 10-in. springform pan. , Bake at 375° for 20-25 minutes or until cake springs back when lightly touched.
