1 (15.25 ounce) Funfetti cake mix
1 teaspoon baking powder
2 eggs
⅓ cup vegetable oil
1 teaspoon vanilla extract
3 ounces rainbow nonpareils

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • In a large bowl, whisk together the cake mix and baking powder. With an electric mixer, mix in the eggs one at a time. Mix in the vegetable oil and vanilla extract until well combined.
  • Roll dough into 1-inch balls. Roll each ball in the nonpareils. Place 2 inches apart on the prepared cookie sheet.
  • Use the bottom of a jar or glass to press each cookie to ¼ inch thick. Bake for 7-8 minutes. Allow to cool on the baking sheet before removing to a cooling rack to cool completely.

2 and ⅛ cups ((300 g) all-purpose flour)
½ teaspoon baking soda
½ teaspoon fine salt
1 cup (2 sticks/227 g) unsalted butter, softened to room temperature
⅔ cup (130 g) granulated sugar
¾ cup (85 g) powdered sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup sprinkles ((or up to 2/3 cup))

Steps:

  • Preheat oven to 350F/180C. Line 2 baking sheets with parchment paper. Set aside.
  • In a medium bowl, sift together flour, baking soda, and salt. Set aside.
  • In a mixer bowl fitted with the paddle attachment, beat butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes. Beat in egg and vanilla extract just until combined. Add flour mixture and beat just until combined. Mix in sprinkles. Do not overmix.
  • Shape dough into balls, the size of 1.5 tablespoons each (I use this ice cream scoop for that), and place on the cookie sheets, spacing them 2-inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don't want to overbake them). Allow cookies to cool on baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.
  • Store cookies at room temperature in an airtight container for up to 3 days. Cookies can also be frozen for up to 2 months.

2 eggs
⅓ cup vegetable oil
⅓ cup confectioners' sugar
5 tablespoons multicolored candy sprinkles

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cake mix, eggs, and vegetable oil together in a large bowl to form a dough.
  • Combine confectioners' sugar and sprinkles together in a small bowl.

I needed to make some Funfetti Cookies but all the recipes I could find started with a box cake mix, which I didn't have in the house. I used Recipe #394495 as my starting point and went from there. I thought others might appreciate knowing how to make them from scratch as well, so I decided to post a separate recipe.

2 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup butter
1 cup sugar
1 teaspoon pure vanilla extract
1 egg
2 tablespoons milk
1/2 cup multi-colored candy sprinkles
extra sugar, for flattening cookies

Steps:

  • Preheat oven to 350°F.
  • Mix together with a whisk the flour, salt and baking soda.
  • Using an electric mixer, cream butter and sugar in a large bowl until light and fluffy. Beat in vanilla and egg.
  • Add flour mixture and beat until smooth. Blend in milk. Mix in sprinkles until evenly distributed.
  • Drop by teaspoon about 3 inches apart onto greased baking sheets. Flatten with bottom of glass that has been dipped in sugar.
  • Bake for about 8 minutes or until edges are lightly browned. Cool on rack.
